Aroma is a nice clean balanced blend of fruity esters and phenolics. Moderate citrus and pear notes with a hint of red apple and a slightly floral ester note. Light pepper and coriander phenolic character. Light graininess.
Pours a cloudy pale yellow gold with very large pillowy white head with rather good head retention. Moderate lacing and small legs.
Flavor starts with a slightly sweet grain character with a hint of wheat. More phenolic than in the aroma with a moderate pepper note, especially towards the finish. Lighter esters with them mostly being citrus and a floral note. There is a light tropical fruit and banana note in the beginning though. Medium noble hop flavor and medium bitterness. Some lingering mineral notes from the water.
Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Water has a moderately hard character to it.
Overall a very nice, enjoyable clean Saison. This beer isn’t funky but the eaters and phenolics provide a nice complexity as does the hops and water. Clear pale amber beer, creamy off-white head, little stable, bit adhesive. Aroma: ripe fruits, bit funky, cultivated bretta, dairy, hay. MF: ok carbon, medium body. Taste: metallic, grassy bitterness, dairy, funky, hay, weird touch, some marzipan. Aftertaste: funky, little sweet, floral, hay, pretty bitter and dry. I can’t help myself but I have the impression that this brewery is overly hyped. I’ve had several of the Dominus Vobiscum series, and none were as good as their RB scores would like you to think.
Tap at Hoppy Loft. Lemony, grainy, rich nose. Pretty deep golden color. Lemony, wheaty, creamy flavor. Nicely tangy, with orange. A bit too rich and malty for a saison, but a good beer.

Sampled draft @ Delirium Hoppy Loft during Zwanze Day shenanigans. Rating the same version as sebletitje, I assume that this is the correct entry. Clear (sigh) golden with a white head. Smells sweet, sugary, cereal and some light grass. Sweet taste, white bread malt, sweet cornflakes with white sugar, grains, bitter hay and bitter floral and grass finish. Uber-simple, sweet and almost macro-fare styled. Light & fizzy, I didn’t care at all for this one & too much stuff like white sugar cornflakes in here. No idea what happened here, I think that I like saison’s & the ratings are very good here. Maybe a bad keg? Worn by travel? Or I am just not getting it. 750 mL bottle from LCBO served cool in a tulip glass. Clear deep golden with a full, loose white meringue. Spicy, zesty citrus, some esters, somewhat spicy, a bit if alcohol stings the nostrils, light wheat and cereals, a little yeasty, smells somewhat sweet, a bit peppery and green/grassy. Medium body, lively effervescence. Lots of wheat and cereals, reasonably peppery and spicy, decent esters, fruity, honey notes, nice; dry with moderate bitterness and a pleasant honey and lightly spicy and fruity finish. Yellow pour with a white head. The aroma has some wheat, citrus and pepper notes. The flavor is full of oranges and lemons as well as yeast and white pepper. Medium mouthfeel and medium carbonation.
