Produced utilizing fresh honey without the addition of artificial flavorings, concentrates or artificial colorings. Even though greater production difficulties occur because pure, raw honey is used for fermentations, the intensity of flavor generated through this technique is worth the effort. Exhibits a richness similar to a fine liqueur, this dessert-style beverage is not fortified, hence, it should be consumed shortly after purchase to enjoy its natural and rich honey flavor. Chaucer's Mead can be enjoyed in one of two ways, either chilled or heated with spices to create a delicious wintery drink. The honey is produced in hives throughout Northern California and is composed of a blend of three types; orange, alfalfa and sage. Each of these components brings a unique quality to the blend and contributes to the overall complexity. Orange adds a pungent orange blossom flavor and has light color. Alfalfa is neutral in flavor but yields a dark, amber color. Sage, on the other hand, has a mild taste and a light color.

Tried with and without the spices. Much better with the spices they mask the plastic flavor. Was not as sweet as I was expecting which was a good thing.

Light golden color. Aromas big honey. Flavors big honey. Highly sweet but delicious. Pretty mono-toned but tasty. Tried with the spiced packet it came with, which made it even better. (consisted of cinnamon, spices, orange peel and clove). Drank at reunion 7/22/16.

750 ml. bottle with mulling spices packet attached. Threw away the packet and drank at room temperature. Look is clear golden and still. Nose is white grape and mildly earthy honey. Flavors of vanilla, honey and white grape. Medium body is smooth and dessert-like, but not cloying. Dangerously well-hidden 10.5%.

Sampled at 3rd annual RI Brewfest. Clear yellow appearance, with an aroma of a moderate honey with some floral hints. Flavor has a lot of sugar, with the honey and a mild floral. The alcohol is well hidden. My only negative is the thinner “watery” body. Thinner than most meads. Not knowing the cost per bottle I would say this is more of a bargain type mead.

Aroma of honey and notes of orange. A straw yellow pour preceeds a taste of honey, and orange, ad some florals. Overall, this is one of my favorite meads.

Aroma of white wine, honey, acidic. Brilliant golden honey color. Sweet, slick , cough syrup like texture, somewhat dry finish. Eucalyptus, honey, orange blossom

"cold-aroma is white wine like...fruity, mucat...and of course, honey. little/no carbonation. surprisngly full body and a strong sweet honey and fresh fruit flavor. hot-throw in the mulling spices, which include cinnamon, clove and orange peel, and the aroma becomes quite earthy...strong...fills a room. great for the holidays. appearance is now golden instead of yellow. i think if i cut the time heating from 10 minutes to 5, i’d have liked the flavor better hot, but the spices were a little too heavy. Enjoyed it both ways, though. If you like honey, it’s for you...if not, don’t bother.

Bottle, room temp, not mulled. Pale in terms of mead, but has the honey-gold edge still. Soft floral scents over the expected orangey honey. Medium sweetness, honey evident but not vibrant. Light and thin, still, long finish where the honey notes stand out more. As a stock option for a casual semi sweet to dessert wine of lower alcohol content it would be welcome in my cellar, but not a thriller. I would enjoy drinking it if it was around, but I’d investigate the other offerings first. The lighter notes would probably make this an inexpensive mulled or spiced candidate for cold weather though, and the mulling packs that came with mine were certainly fragrant and pleasing. Might be worth a shot.

Orange, flowers, marshmallows, and alcohol in the aroma. Flavor is mild and sweet, with some spice, marshmallow, and drying alcohol in the finish. Nice flavor and balance in this fine mead.

Served heated with a golden color. Aroma of honey, spice and herbal. Taste is primarily honey and spice. Has a sweet sticky finish. Moderate body smooth with the 10.5 % ABV well hidden. Nice warmer for the holiday/ winter season.

750 ml bottle mulled. It pours a golden color with no head or carbonation. It has the aroma of honey and spices. It is warm with a floral, citrus, cinnamon, nutmeg and other spice flavor. It is thick with a wonderful honey taste. It’s a shame that this is so hard for me to find. Finding mead has been so difficult that I recently started making my own.
