Bottled. Pours light amber in color with a whitish head. A bit of bready notes, some yeasty spicyness and light herbal notes in aroma. Feels dry. Dark sweet bready notes in taste, some spices too. A bit of biscuit towards the end.

Hazy yellow colour with a generous white head with small bubbles and good duration. Aroma is fruity, with banana and apple, slightly citrus hints, cookies and yeast. Flavor is slightly sweet, fruity, spicy. The final is light bittery, alcoholic and dry.

A steady pour into my New Belgium globe glass produces a three-finger thick, off-white colored head. The beer is a honey color that shows a brilliantly clear, yellow-gold hue when held up to the light. The beer smells distinctly of Chimay, but has a lot of extra spiciness here as well; this is hugely fragrant with earthy, spiciness, Curacao Orange zest, floral cardamom, lots of dirty cardamom.

The beer has an ample sweetness to it that is really brought out by the spiciness, and reminds me quite a bit of honey in some ways. Really earthy, somewhat dirty, coriander notes, lots of orange zest flavors, and a spiciness in the finish that is turpene laden, slightly woody, and it really dries out the finish a fair amount. The beer is fairly light bodied, especially for its strength, but does have some texture to it, and there is quite a bit of effervescence here. The finish has some bit to it from the cardamom, and perhaps from some hop character as well. The malt character plays a supporting role here, but does contribute a soft hay like note, a touch of chewy saltine cracker flavors, as well as a touch of rustic white bread like pale maltiness.

This is overly dominated by the spice character, and it doesn’t help that the Chimay yeast is overly spicy to begin with. Not bad though, but it really isn’t quite my cup of tea.
