Just when i thought Chimay couldn’t get any better, i found some vintage Chimay Bleue. If you think it is good at first, the complex flavors of the beer come out when properly stored. I would reccommend anyone get this beer, and get a lot of it so you won’t mind sitting on some to age it appropriately.

Best beer from Chimay that i have tried. Very tasty beligan beer with amber/brown cloudy color. Well balanced. Very strong but cannot taste alcohol. Man those monks know what they are doing. One of my favorites. Good anytime of year

Enjoyed this one in Brussels but available locally in US. Reddish Brown in color, big head whic vanishes quickly. Strong flavor and aroma.

Brown cloudy beer, with a very foamy head that doesn’t take long to disappear. Aroma: Yeast, port wine, chocolate, some pepper and vanilla and slightly lactic. Strong body, it weights in your tongue.Taste: sweet, but with the usual harshness, floral, liquor, chocolate, plums or raisins. Another great beer from Chimay, better if you keep it stored for some years before drinking it.

Aroma: caramel, yeast, slight floral at first sniff, but couldn’t get that one again.
Appearance: Dark reddish brown, hazy, with a bubbly head (initially 3 fingers).
Medium body, slightly sweet and smooth with a lasting finish. It has all the sharper elements of a strong ale, but remains smooth and almost creamy. Agitate the beer and the yeast flavors really come out.

You can tell that it’s bottle conditioned from the head (very bubbly and disapates quickly). Bouquet has the characteristic Belgian beer smell; very gentle flowery/fruity smell, with a punch of a smell that is acrid. One writer calls out "caramels" and at the suggestion it’s hard not to notice. Color is a nice a warm brown nutty color, but the beer being unpasteurized/unfiltered and bottle conditioned is pretty cloudy. It is very drinkable and smooth, flavor is understated and not all that memorable. The high alcohol content goes right to your head ;) Definitely a top-notch beer, but not my favorite

UPDATED: SEP 24, 2007 Re-Rate...Pours ruby brown with a thick disappearing foamy head. Yeast and fruity sweet malty aroma, with a hint of toffee, spice, and just a bit of alcohol. Slightly fruity and spicy yeast flavors are the most notable, with notes of cherries and slight floral hops. Palate is medium, warming, full of lively carbonation, and bitter-sweet. Enjoyable and fairly complex strong ale.

Bottle. Poured brown with a tall off-white head. The aroma found malts and spices. The flavor appeared fruity with light spices. Medium body and slightly sweet. I did not find anything particular that stood out other than it was very smooth and overall enjoyable.

UPDATED: MAR 27, 2015 Had the 330mL bottle. The aroma is like a handful of caramels, malts and pulled taffy. Beautiful hazy, opaque dark red color with thick frothy, half bubbly tan head of two fingers. The flavor goes through a set of stages as it warms. Spicy but the dominant flavors are the malts and beasts. most other strong belgian ales, this one isn’t fruity in the aroma and flavor. Mouthfeel is warm due to the high alcohol content, the cask conditionning makes this heavier beer seem to evaporate on your tongue like a champagne.
