COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Bottle from Belgianbeershop.com. Head: thick, beige, stable, nice lacing. Color: dark red brown, very beautiful. Aroma: filled with malts, notes of caramel and dark fruits. Alcohol is detectable. Taste: liquorice, dark fruits, well balanced sweetness-bitterness, complex. Mouthfeel: full. This is a heart warming beer, filled with lots of different flavours. Wonderful brew but not the best of the Chimay trappists.

Bursztynowe, nalało się praktycznie bez piany. W aromacie sporo suszonych owoców, figi, daktyle, ciut moreli. Delikatnie przyprawowe akcenty też się pojawiają. W smaku gładkie, bardzo mocno owocowe, zdecydowanie słodkie. Niby nudna Belgia, ale piło mi się to naprawdę przyjemnie. Gładka faktura, zero alkoholu, zdecydowanie fajna rzecz.

UPDATED: JAN 17, 2017 Bought at Colruyt in Antwerp, 330 ml 2016 bottle. Served in a Trappist glass. Aroma is very malty, like caramel, but not that intense. Colour is rather dark, like a Dubbel. Taste is bittersweet, but more sweet than bitter. Aftertaste is in some way watery. Carbonization is still rather good. Overall, it tastes like a stronger Dubbel. I prefer the Trappiste Rochefort 8. Chimay Bleu is in my opinion too overrated. My favourite Chimay is still Chimay Blanche.

Na wejście gushing. W zapachu nuty sodowo alkoholowe. W konsystencji puszystość i wysokie nasycenie. Złożony smak.

Piwo metne w kolorze brazowym z obfita lekko bezowa obfita piana. W aromacie na pierwszym planie karmel i belgijskie "przyprawy" pochodzace od drozdzy, sa tez suszone rodzynki i figi. W smaku mamy w dodatku nuty chlebowe i troche banana. Wysycenie na sredniowysokim poziomie prawie bez goryczki, alkohol niewyczuwalny. Bardzo zlozone i bogate piwo ktorym mozna sie rozkoszowac przez dluzsza chwilke lub wypic szybko z przyjemnoscia.

Chimay bleue... LA Chimay bleue, la fameuse, et en bouteille de 75cl s’il vous plait ! Brune transparente avec de superbes reflets rubis, le tout couvert d’une grosse mousse ivoire, bien dense et bien stable. Nez chocolaté à souhait, avec des notes de lait et de noisette. L’habituel caramel bien sûr, une légère levure, un alcool perceptible, le pruneau, la poire, la mirabelle, le raisin, l’orange, le citron, un côté douçâtre beurré, du miel, du bois (passé à la cire d’abeille !), du cuir, de la cassonade, de la vanille, un peu de coriandre, de la fleur de rose, de la fleur d’oranger, de la bergamote, du jasmin... Très beau nez, pas le plus complexe ni le plus original qui m’ait été donné d’humer, mais c’est du très haut de gamme et ce côté floral est le plus indéniable de cette bière. La carbonatation est soutenue, l’alcool puissant mais sous contrôle, la texture bien souple mais aussi pétillante avec cette grosse carbo. Deuxième gorgée sur les malts et l’amertume, très affirmée avec des saveurs et arômes de café ainsi qu’une petite sécheresse tannique au palet sans parler du fond de langue... Troisième gorgée qui révèle les levures, douces et sans ce côté cave. La quatrième va sur les notes de bois, de cire, de cuir et de terre. Le final est long, l’alcool prend le temps de descendre et de récurer la tuyauterie tandis que les arômes de malt restent en bouche, l’amertume s’assagissant au fur et à mesure. Petites notes minérales et herbeuses sur la toute fin, très rafraichissantes, ainsi que le côté très légèrement beurré... Voilà, c’est une Chimay bleue... Pas mon breuvage préféré, mais le plaisir est toujours intact ! Bouteille 75cl, supermarché XXX.

Not very intense aroma, rather slight. First taste is malty, rich, caramel. Then bitterness kicks in, alcohol. Finish also bitter, alcohol. A bit overrated beer in my opinion. Maybe have to get some aged bottle.

A well balanced beer. Its not a slow drinker nor a pilsner. One can easilly enjoy this beer. Don't drink it to cold. The aromas stand out better at little elevated temperatures (say 10-15 deg.) Some say one has to store this beer for 15 years to reveal all its qualities, hence we stored 2 bottles in te wine cellar. ---Rated via Beer Buddy for iPhone

750 mL bottle. Pours a murky brown with a big khaki head. Smells of caramel, bread, and banana yeast aromas. Tastes very bready. Has a little sweetness, but less than I would have expected. Earthy and lightly spicy finish. High carbonation. I can’t believe I’ve never rated this. This style is remarkable. This beer is delicious. When someone tries to recreate it and misses the mark even a little bit, it’s practically undrinkable.
