Clear reddish to amber beer, small irregular aery white head, unstable, non adhesive. Aroma: some banana, yeast, caramel, bit sweet, bit sugary, grains, nice stuff. MF: lively carbon, medium body. Taste: lots and lots of alcohol, bit sweet, banana peel, bit sweet, sugary. Aftertaste: little bitter, caramel, dried fruits, banana, alcohol, malty, raisins.
Bottle @ DØE meeting. Pours hazy dark brown with a tan head. Aroma of malt, yeast, light sweetness, wood, oak, dark fruit, little vanilla, light cognac. Flavor is light sweet, malt, caramel, wood, oak, dark fruit, vanilla, cognac, light alcohol. Dark brown and cloudy with lasting head. Aroma and flavour have sweet dried fruits, yeast and a lot of woody dryness. A little boozy.

Gentle apple-ish estery aroma. Super light palate, drinkability very good. Beautifully mellow rich malts, sweetish, fruity esters, and just a small hint of the barrels, no spiritiness. I think I finished this bottle, once everyone had finished rating. :-D (There was no way we were letting the Chimays go to waste, they were all so good.)
Thank you for sharing tderoeck! 750 ml. bottle sampled @ RBBSG17. Dark brown amber, creamy lovely tanned head. Nose is lovely Chimay Blue dark fruit, candied, sweet, oak, barrel,… taste is banana, dark fruit, caramel, sugar, dates, Chimay Bleu dark fruit, solid bodied, oak in the finish, warming spirit. Barrels aren’t very outspoken but do clearly elevate the beer, best Chimay yet in my opinion, this one is export only apparently so go figure, price is insane.
