the perfect baseline for anybody's understanding of beer. in my first tasting of this, i was reminded of all of my favourite beers in trying to describe what chimay red's flavour is. it has the smoothness of a hazelnut brown ale, matched with the tropical fruitiness of a munich weiss, the dark/light nature of a dunkel, alongside the skilled fermentation required for the best saisons. this beer is both accessible to any palette and impressive to the experienced looking for something special. chimay's red is the centre of the compass for exploring truly good beer.

UPDATED: OCT 27, 2017 In the aroma i find something from a fruitiness, not citrus but more red fruit on an undertone of malt. It looks rather clear-copperish with a nice head. The taste has a nice bitterness with a touch of sweetnes, not yeasty. Reminds me of old-style abbey-beer(before the trippels and dubbels) beer much but more sophisticated. Strong Belgian yeast fermentation. A nice malty sweetness with notes of burnt caramel and toffee. When first opened and cold it is very effervescent; reminiscent of champagne. this carbonation overpowers the subtlety of the beer. But that settles down after it sits a bit. The character really changes with temperature. You must let this one warm up to reach its potential. It is much mellower and tastier with a subtle complexity when just slightly chilled. An excellent Belgian dubbel.

Pours a cloudy, crimson-maroon beer, with vigorous fine carbonation, and a tight, rocky, off-white head. The aroma is led by malt, and dark, fruity phenols: biscuit, honeycomb, caramelised sugar, then plum skins, cherry, spices, and a vague hint of banana. Oak sap and mineral water come through on the finish, and a warming tinge of alcohol suffuses the throat and nostrils. The mouthfeel is soft and smooth.
Although the yeast does imbue the beer with a degree of complexity, it lacks the interest and depth of flavour that other Trappist beers provide.
