Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I wasn’t incredible impressed with this beer the first time or two I had it. This last time, however was a little different. I had a bottle that I had been aging for about three years. I took it to a beer release with a buddy of mine. Wow, what a difference three years made. It was incredibly smooth and had some real depth of flavor. I think I will pick up a couple more of these to age. I love the Chimay Blue fresh...but after tasting this aged...might have to try aging the Blue also.

Reddish brown color, a little hazy. Bright white head, very carbonated. Floral and dried fruit aroma, figs or plums. Very carbonated, fizzy off tongue, body is full but carbonation makes it feel lighter. Plum, pear, banana, spicy flavor, malty flavor, with toffee or caramel. ---Rated via Beer Buddy for iPhone

Colore ambrato scuro, schiuma corposa e persistente, carburazione media. Sentori di malto e ferro che svanisce con la bevuta. Al palato malto, crosta di pane e albicocca. Finale amaro, birra molto equilibrata e molto bevibile.

UPDATED: APR 18, 2017 3 ans et 8 mois avant DLC. Brune ambrée col de mousse magnifique et tenue exceptionnelle, carbo importante. Arôme malt toasté et raisins secs et alcool. Bonne rondeur, malt grillés, légère amertume. Bonne bière.

750mL corked & caged bottle - VERY old - 07/08 vintage? Label has seen better days. Bugger to get the corked out but presented with a gorgeous looking beer - deep ruby body, small but dense beige head persists. Aroma subtle but intriguing - dried fruit notes of date, sultana, prune, vinous red fruits, honey & caramelised sugar/fruit. A sultry silky smooth ride on the palate - soft fine carbonation, texture is velvety, perhaps lost a bit of weight with age but ethereally light, tremendous balance. Palate is just sensational for an aged beer - starts sweet with those caramelised malts, good weight upfront then slims down with stacks of sultana & date and porty nutty rancio notes on a long spicy yet supremely well balanced finish. The joys of great ales with maturity behind them - better than any fresh Chimay Red I’ve tried!

330ml bottle. Pours with a good head and lacing. The aroma is pleasant, yeasty, fruity and malty, some banana as well. The taste is similar but is surprisingly flat. Not in terms of carbonation but flavour. Quite a subtle taste, good but could be better.
