COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Bottle at the beernight at Huub's place. Cloudy yellow color, little head. But a really good smooth taste.

Apriencia muy bonita; al servirla en copa genera una espuma blanca de tres dedos que pesiste muy bien. Color madera anaranjado y ligeramente turbia. Se ven la burbujas ascender rapidamente. Su aroma es super frutal y potente, apetece darle un buen trago. El cuerpo es medio-alto y la carbonatacion por las nubes al principio, que se va reduciendo con los tragos dejando un toque picante en la boca. Su sabor es de entrada dulce y frutal (naranja, plátano, ciruela...), avanzando hacia el amargor del lúpulo muy presente en esta cerveza. Una birra redonda, de las mejores que he probado.

Bottle at Den Engel, Leek. Pours a hazy golden colour with a medium white head. Aroma of peach, orange, some pear drops, slight Belgian yeast, a hint of straw and subtle spice. Taste of peach, apricot, some orange, pear, slight Belgian yeast, phenols, a little bready malt, straw and subtle spice. Medium bodied and moderate to high carbonation. A soft, warming, spicy yeast bitterness in the finish. Solid Chimay, cleaner than expecting, just with a wisp of yeast.

Typical Belgium yeast notes. However more bitter than normal. I would like to try to get in after letting it warm up. Also aging supposedly mellows this beer. Might be worth putting a way a sixpack trying one in a year and then in two ---Rated via Beer Buddy for iPhone

Pouring it from the bottle into a Chimay chalice glass, you get the familiar banana ester smell from the yeasts used in the fermentation. Great looking beer with a head that retains itself very well. Taste is mildly sweet, malt, spice, pear, orange. Good trippel. ---Rated via Beer Buddy for iPhone

330ml one year old bottle poured into Stone snifter. A: Hazy amber, very foamy head, very good retention, left lots of lacing. S: Phenols, peaches and hints of booze. T: Phenols, starch and slightly bitter peaches. M: Not much carbonation, medium body, slight burn from the booze. O: A classic Tripel, the year of aging took some of the bitterness off it.
