COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beers flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz (beer-pages.com/protz/features/chimay.htm) and John White (www.whitebeertravels.co.uk/chimay.html)

Very good tripple. Full-bodied and firm. Very filling. One of my favorites.

Corked Bottle - Soft amber, slightly orange, hazy, with huge creamy offwhite head. Strong aroma - sweet malt, overripened fruit, and floral notes, very pleasant. Delicious flavors of creamy sweet malt, raisins, with slight, good bitter finish. Alcohol present, but not powerful, but rather smooth. Well balanced (malt/hops). I really love the smell of this beer. Plus, I enjoyed every drop. Maybe Im not with the majority, but I liked this better than the Chimay Blue and Rouge. To each his own.

This most famous of the Trappist brews doesnt disappoint with its white - it is beautiful on the palate. A rich, spicy and sweet flavor that delights your tongue with taste.

UPDATED: JUN 8, 2010 One of the most balance blondes. My favorite beer when eating sushi. A thick, lively beer with plenty of flavor. Updated: What makes this beer so special is the complexity and the balance of all that is going on in this fine brew. You have the nice delicate sweetness and carbonation that you get with you Belgian strings but a nice balancing hit of hops. I do have to knock this beer down to a 4.9 however because I can only give one 5 rating and until Ive rated many more beers, I am not ready to annoint this a 5. But its darn near perfect to me.

Sometimes the hype is well deserved, as is the case with this brew. Not too much of the flavors that are usual for this style, but just enough to make it a classic. When will other brewers stop bludgeoning their customers over the head with flavors and just let the natural processes develop on their own? Beautiful head.

33cl bottle into a chalice. Pours a hazy amber with a huge white head which persists, leaving good lacing. Nose is Belgian yeast and malt. Taste is malt and candi sugar, with a smooth finish with a kiss of hop. Delicious.

Golden pour. Subtle subtle leafy/raisin aroma. Amazing leafy sweet bitterness that leaves a pronounced wonderful finish!

Had it with cheese in front of a fire place. Perfect.

IMO better than the reserve. And I loved the reserve. This beer is just about perfect. Dark copper color, full-bodied, and fruity.
