Glorious things of thee are spoken, Chimay White. A hymn of praise should be written to extol thy greatness. Why have I been remiss so long to enjoy thy bounty?
Typical Belgium yeast notes. However more bitter than normal. I would like to try to get in after letting it warm up. Also aging supposedly mellows this beer. Might be worth putting a way a sixpack trying one in a year and then in two

Pouring it from the bottle into a Chimay chalice glass, you get the familiar banana ester smell from the yeasts used in the fermentation. Great looking beer with a head that retains itself very well. Taste is mildly sweet, malt, spice, pear, orange. Good trippel.

330ml one year old bottle poured into Stone snifter. A: Hazy amber, very foamy head, very good retention, left lots of lacing. S: Phenols, peaches and hints of booze. T: Phenols, starch and slightly bitter peaches. M: Not much carbonation, medium body, slight burn from the booze. Lightly hazy deep golden colour. Spritzy pour with a large head that dissipates fast. Aroma medium high citrus, orange skin, bubblegum, tropical/stone fruit. Perfumy alcohol. Taste citrus and bubblegum and tropical fruit. Crusty bread. Spritziness makes it easy drinking with a medium full body. Noticeable clean alcohol. Complex yet easy drinking beer. Very well made.
