COMMERCIAL DESCRIPTION
Chimay Tripel, with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beers flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

UPDATED: AUG 9, 2011 Bottle. The pour was a cloudy amber-brown with a large (2-3 fingers) off white foamy head that had great retention and produced some really good lacing that lasted throughout. The aroma had a gentle scent of bread malts, a very mild resin hops and a nice dose of a leathery yeast with a hints of raisins, caramel, banana and a touch of vanilla. It had a bitter-sweet taste with a hint of dried fruit and vanilla at first and finished with a slight emphasis on the hops yet remaining quite malty with notes of banana and some spice at the end. The flavor was left to linger for an average amount of time leaving a nice warming sensation behind. Mouthfeel was medium to full in body with a very creamy yet dry texture with a mild carbonation. Overall an absolutely tasty Trappist Ale that lets the fruit and malts blend together ever so perfectly. It is as I would call it, a very nice relaxing sipper".

Cork Bottle: Pours a hazy murky gold with thick foamy head. Aroma is very floral and fruity. Taste of apricot, orange, plum, fresh bread, and spice. Very nice.

UPDATED: APR 24, 2017 Barwa bursztynowa, wysoka piana. W aromacie belgijsko + banan. W smaku troszkę słodko, przyprawy, czuć chmiel. Wysokie nasycenie, ktre mimo to nie przeszkadza.

Hazy dark yellow with strong pure white head. Earthy belgian yest, banana, coriander, some maltyness. Yeast, lots of herbs, especially coriander. I think this could have used more waiting. Nice but not stellar. Perhaps needs maturing.

Draft Taproom (Charlottesville). Surprised to find I hadnt rated this. Only slightly hazy with a head that laces the fuck out of the glass. Banana, spice, light garbage water, gum in the nose. Flavor is crisp grasses, bubblegum, coriander, other spice, fruit.

Bought a 750 ml bottle of the white for the first time in quite awhile. Why did I wait so long? The presentation is grand, its yellow-orange body is a bit hazy but the head is bright white and frothy. The foam is replenished by a very active effervescence. My Chimay glass is appreciative. A sniff delivers yeast and cotton candy. The first taste is delightful, the yeast once more, dough, apricot, a slight cane sugar sweetness. And then, surprisingly, a lingering, moderate bitter finish. Many moving parts that add up up to extremely nice and drinkable beer.

Bottle at Herman, Berlin. Hazy golden colour with a frothy white head. Aroma is dough, alcohol, some banana and raisins along with some other fruits. Taste is superb, fruity flavour with medium sweetness, light sourness and light bitterness. Palate is very nice, too. It is medium-to-full bodied with a very pleasant creamy texture. A satisfying sensation in the mouth. Head is almost always there and it makes the drinking experience better. Carbonation is average-to-lively. Finish is somewhat bitter and long-lasting, pleasant! I really dig this one.

Barwa ciemnego złota, mętne(z pływającymi drobinkami drożdży). Aromat przyprawowy, są rwnież cytrusy, pomarańcze, estry i nuta przywodząca na myśl biszkopt z miodem. W smaku przyprawy, najpierw owocowa słodycz, po ktrej następuje trochę pikantna goryczka. Dobrze ukryty alkohol, spore wysycenie. Piwo raczej wytrawne, bardzo pijalne.
