We salute Don Gavino with this tart guava ale, aged in chardonnay barrels to create a balance between the sweetness of the base beer and fruit with the tartness of the lactic fermentation.

Pouring at EBF 2014. Pours a mostly clear amber with a thin to medium sized white head. Musk, wood, vinous. Faint fruit and funk. Sweet into a bit of acetone. Tart but the acetone and acetic qualities are distracting. Long tart wood and wine, faint funk on the finish.

Poured from bottle into a tulip: This is a strange one. It’s got a little bit of everything going on. Pours golden with a nice white head. Aroma is chardonnay, tropical fruits, grass, funk, Taste is all over the place. It’s sour, bitter, has touches of tropical and citrus fruits, and wine barrel. Heavy boozy body, fairly sticky mouthfeel, pretty sweet, but somehow this kind of works.

Draught @ All In Beer Fest 2014. Pours golden with a small offwhite head that leaves a small trace on the glass while dissipating. Smell is slightly malty and fruity with caramel, lemon juice, guava, hay, dry soil and lemon zest. Taste is sour, slightly malty and fruity with caramel, biscuits, lemon juice, yoghurt, guava, prickly pear, hay, dry soil and lemon zest. Mouthfeel is soft, slightly dry, tart, round and medium bodied. Finish is sour and fruity with caramel, lemon juice, sour milk, guava, prickly pear, hay, dry soil and lemon zest. Good but less than I expected.

I dig it but man its on another level of beer intensity. Big boozy, fruity, sour, oaky, and palate devouring. Aroma is guava or whatever odd tropical fruit that I never eat but pretend i know what it smells like in a beer review, oak, lactic sour, and sweet. Taste is very sour, and also quite sweet without being too cloying. Wine barrel on the backend keeps things in check a bit.

aroma is lemony citrus, maybe some tangerine. appearance: cloudy orange-amber. Creamy white head. tastes like a fruit juice; heavy on citrus rind (grapefruit more than guava). palate: lively carbonation and creamy mouthfeel.
