Guava Grove is an American Sour Guava Ale that experiences three fermentations. Primary fermentation is conducted with lactobacillus, a bacteria that sours the wort. The secondary fermentation takes place when we add a saison yeast that is French in origin. The tertiary fermentation is spurred by the addition of one of Tampa’s favored fruits, guava. The acidity of this elegant ale cuts fatty foods and oily fish from the palate beautifully. Pairs well with mussels cooked in gueuze, ceviche, ferrines and rich, creamy cheese or cheesecake.

On tap @ Copenhagen Beer Celebration 2014. This one has a light blurry golden appearance. A small but lacing white head safely placed on the top. Really intense fruity nose with lots of funky citrussy brett tones. Some sour apples, sweet peaches and some pineapple thing. Quite much more sour than I expected in the taste. Sour-ish apples, it has a thin oily mouthfeel and a mild carbonation level. Ends soft grainy. Actually quite nice and refreshing up-bretted one. 02.05.2014

Shared 750 at Craft. Poured turbid gold with white head. Heavy guava, tart lacto acids in the nose. Very tart flavor, heavy on the guava, very tart, with yeasty and funky notes throughout.

Bottle from 2013, opens with a quick pfffftt. Light amber pour, decent cream hued head. Lght lacto tartness, solid guava, undertones of sweetness. Light to medium body.

750ml bottle pours out a hazy gold topped with a small head. Nose is tart light funk some jolly rancher candy sweetness with a nice fruit touch. Taste is more of tart funk fruit notes.

Bottle from MeadMe, thanks for the hookup. Cloudy murky golden orange color with a bubbly beige head that lasts forever. Sour earthy citrus pie cherries grapefruit lemons and a light bready sweetness deep underneath. There’s a lot going on here. Tart but not braceingly so with the fruit providing a nice counter.

Bottle thanks to Sean. Pours a cloudy yellow color with a medium white head. A big ripe fruity nose with oak and light funk. The flavor is big sweet syrupy fruit, some funky sourness, but a nice dominant fruit flavor. Funky dry finish. Very good.

Bottle sample from "douglas88". Colour...hazy gold with no head. Nose...very guava-y with a general fruity character. Palate...tangy, sweet and quite fruity with guava purée and puckery lacto infused fruity goodness.

Bottle picked up at CCB. Pour is a hazy, light orange pour with a small white head. Nose is a bit subdued, with just hints of funk and fruit. Taste is a bit subdued as well, with nothing taste forward, a medium acidic sour. Decent, but not memorable.
