Aroma: incredible perfumy citrusy hops, sweet caramel malt.
Taste: bright woody spicy perfume, ton of citrusy piny hops, and some sweet caramely malt.
While most wood aged flavors seem to me to tie into the malt profile of a beer, this white oak blends into these hops in an amazing way, creating a unique and incredible combined flavor. Reminds me more of a spruce or juniper beer than one aged on american or french oak.
This is probably my favorite IPA on the market. In addition to the tasting notes that this gets from the regular Jai Alai, the white oak adds another dimension to this beer. Pours a cloudy amber color with white head. You can smell the white oak on the nose, along with vanilla, grapefruit, and a hint of pine. Pours out a hazy gold with a frothy off-white head with great clinging power. The nose is intensely oaky and zesty with additional notes of peppercorn, grapefruit, vanilla, and clementine. The flavour displays everything the glorious bouquet of citrus and oak in the aroma prepares you for. This is a perfect IPA. It is ripe with citric fruit flavours. It has the perfect balance of bitterness, drinkability and aromaticity. The hops display both citric and floral character, both lingering in the finish, accompanied by an alcoholic warming. This beer is probably the closest to perfection that can be found. The malts balance perfectly with the hops, and has a great gentle slide of bitterness and sweetness. Wonderful beer!

UPDATED: MAR 13, 2013 Cloudy orange pour, sticky lacing. So much orange on the nose! Grapefruit, tangerine as well... but that orange smell, wow! BEST AROMA I’VE EXPERIENCED. Pours cloudy pale orange with a small yellowish white head. Smells of citrus, pine, hints of spice, and subtle sweetness. Taste is bitter, hints of citrus and pine, with a solid oak dryness and a slight ting of sweetness. This beer is so good. I would drink this everyday if I could. I drink it at the taproom and from the bottle. I would growler this if I could. Citrusy smell unbelievable taste.
