Bottle shared at the End of History tasting. Wowsers this was better than I could have hoped. Aroma is cheesy funk, tart and bitter cranberry, and green underripe raspberry. Pours light pink and bubbly with a fizzy quick head (very happy to see that with some of the woods’ mishaps). Taste is ultra tart raspberry/cranberry with a lingering oak and stilton funk. Fantastically tart and crisp. Wish the bottle was bigger and easier to get.

187 ml bottle served in a Cantillon Taster. Big thanks to time4lunch for the brew. A: Pours a solid ruby red color with a chilled haze to it. An off white head forms on the pour and recedes quickly to a thin ring. No lace. S: Fresh raspberries with a little dirt. Funky cheese with some light oaky notes. Tart berry notes with a little bit of sour pucker to it. Really nice. Light jammy berry. T: Funky cheese, oak barrel and some raspberry pop. Tart raspberry notes throughout the middle with some definitive sourness on the back end. The finish is mouth puckering with a combination of sour raspberry, some white wine, oak and light barrel sweetness. Slightly jammy as well in the sweetness department. M: Light bodied. Medium high carbonation with a sour and sweet finish. A little drying in nature. O: This was absolutely delicious. I sincerely enjoyed this one and wish I could have it again. Really balanced across all fronts. Tart, sour and sweet. Wonderful. Serving type: bottle
