COMMERCIAL DESCRIPTION
We took everyone’s favorite Imperial Stout (sans coffee) and aged it for nearly a year in fresh Heaven Hill Bourbon barrels, which we then blended in an attempt to tame the bourbon beastliness. Creamy vanilla and smooth oak on the nose complement and round out the roasted, bitter chocolate characteristics. A kiss of bourbon booziness on the palate provides the perfect finish for this rich and decadent tribute to the dark months ahead. Be prepared…winter is coming.

This is up there with the best bourbon aged Imperial Stout I’ve ever had, Bourbon County. Pours a deep ebony with a thick head of tiny bubbles. Huge aroma of chocolate, bourbon and coffee beans. Perfect body, smooth and creamy like a milk shake. Flavors of dark chocolate, a bit of fresh espresso, and a subtle note of bourbon (vanilla, caramel). Finish is clean and smooth with a chocolate/plum linger. What makes this beer so fantastic is the perfect balance of flavors, the subtly notes of bourbon and the complete lack of any solventy notes, which for a 12% beer takes some serious skills. This beer stands on it’s own but if you want to pair it dark chocolate, anything with vanilla (ice cream), or a strong soft cheese (goat, Saga) would be great.

Tap @ bishop’s arms, savoy Malmö. 2016 edition @ 11%. Pours an almost black liquid with a small beige to brown head. Aroma has intense but balanced bourbon and vanilla notes. Also coffee, dark chocolate, wood, sweet licorice, raisins, dates, booze, port wine, tobacco. Mouth feel is big with a rather smooth palate, good taste duration and medium carbonation. Flavor starts out with coffee, vanilla, "bourbon booze" , licorice, tobacco, vinous raisins. Finish has increasing levels of wood, licorice, roasted malt. Nice chocolate and coffee like bitterness in the aftertaste along with warming booze.

Seems barrel heavy some bourbon notes. Slightly flat. Pours black with little head. No overpowering flavors. Goes down easy for an imperial stout. Has an earthy finish.

2015 Bottle Pours completely black with a thin light brown head. Smell of rubbing alcohol, oak, molasses, and bourbon. Taste is of whiskey, oats, a hint of spice, a hint of vanilla, with a bit of soy in the finish. Mouthfeel is somewhat thin for the style. Almost no carbonation. Overall it goes down pretty smooth but not with the best flavors.

Tasting at Matt’s; 11% ABV
Black color. Dark caramel and wood aroma, some glue too. Good body strength, yet the mouthfeel is lean; nice degree of sweetness; the dark malt and dark chocolate flavor is very nice, with a touch of marshmallow in the end. Alcohol warmth.
Excellent.

500mL bottle, pours black with a small tan head. Aroma is very complex, with notes of oak, vanilla, bourbon barrels, and chocolate. Flavour is along the same lines, with lush notes of vanilla, bourbon barrels, chocolate and some oak. Super cohesive and complex, with not too much sweetness. Barrel aging done to perfection. Really excellent.

bottle, nice big roasty ashy stout. Light on the bourbon barrel flavors. Bitter and very roasty finish.

"NO sign of 12% anywhere in this brew. Body was big, but not sticky or alcoholic. Not as deep as the best imperial stouts, but the bourbon aging was very nice - lots of vanilla, chocolate, and oak...and an odd but nice graham cracker flavor. Pretty nice rendition of a barreled stout."
