Perhaps I lack the knowledge to speak to the quality of a given apple but this one is notably sour and sharp and I rather enjoy it. It’s a very nice cider.

Keg at Citizen Cider, Burlington. Clear very pale yellow. Interesting floral nose with a distinct and unusual apple character. Dry with and underlying fruit sweetness. Citric and spicy with an array of apple flavours. Lightly tanninic finish.

750 mL bottle from Winooski Beverage. Clear pale golden, thin fizzy white head, good retention. Aroma of dry apples, earth, mild tannins and leather. The taste is dry tart apples, vanilla, earth. Medium bodied, spritzy high carbonation, champagne-like. Nice.

hazy light yellow. Aroma is nice. Dry, apple peel, very crisp. Insanely awesome mouthfeel. the bottle conditioning makes this reallygood. great crisp, tart, lots of apple, pear, honey, great mouthfeel.

This is fairly sweet for a dry cider. It certainly isn’t too sweet, and it certainly isn’t too dry-- which is, what I think, the middle ground most cider drinkers want. The 6.9% doesn’t get in the way of its musty-tart sweetness. A very well-balanced cider. It’s expensive, but I will be buying more of it. Would love to cellar it for next fall.
