COMMERCIAL DESCRIPTION
Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Dark brown pour with beige head. Aroma of bourbon, chocolate and vanilla. Taste is the same with emphasis on the bourbon. This is a great beer.

Aroma- Over powering bourbon smell with subtle chocolate, and vinallia. Appearance- Pours dark brown with a little carbonation and head. Taste- Strong bourbon taste, oaky, and dark chocolate with very subtle spice. Palate- Full body and dry fruit. Not much of of chili/pepper taste. Overall- The bourbon was present given that it was barrel aged but the bourbon was a little over powering. I expected a little more pepper flavor.

Bomber at my place with crew. Aroma is malty bourbon barrel. Taste is malty bourbon I guess chocolate. Finish is long and raison nice. Great beer.

Bottle at home. Pours clear dark brown to black with a medium, frothy tan head, short retention with light lacing. Aroma is bourbon, oak, prunes, dates, figs, chocolate and cookie malt. Flavor is dark malt and fruits, light hops and bitterness, oak, bourbon, and a dry/spicy finish. Full body and medium carbonation.

UPDATED: MAR 27, 2014 Bottle: Thanks, Scott! Deep brown, almost black with ruby hints. Creamy tan foam fades fast. Aroma is sweet chocolate, nearly tart dark fruits, mild vanilla, some bourbon head, wood, and faint back-end spices. Hard to discern peppers, cinnamon is more notable. Taste is very smooth. Surprisingly not hot, smooth bourbon, sweet cocoa nibs and vanilla drizzle, some warm cinnamon spice, and just a mild touch of peppers at the very end. A touch of oak in the finish as well. Mouth feel could be better, as is the case with most Clown Shoes stouts, it seems, but this is thicker than most. Very good beer overall.

Prominent, gourmet dark chocolate vibe here, with accompaniment by very smoky bourbon barrel tannins. Vanilla extract. It feels very full-bodied, coating the palate, but not overly boozy somehow. The finish actually contains some bitter hops, through the thickness of the barrel aged malt flavors, and a light, peppery burn.

Dark brown with a tan head. The aroma and flavor are very nice. I get a lot of chocolate and oak notes as well as some molasses. The whiskey is very evident with some strong bourbon notes as some maple and vanilla. Fairly sweet but still easy to drink. Medium mouthfeel and medium carbonation. Great beer.

bottle. near black with a very small tan head. aroma is strong bourbon with hints of vanilla and coconut. the body hits me a bit light and astringent. it feels like its missing some midrange depth of something. the flavors are that of a nice bourbon aged imperial stout...but i thought there was some peppers in here? the beer mellows as it warms, but theres a lingering fusal flavor. its a decent barrel aged imp stout, but if your looking for a cocoa mole, look elsewhere.

I will echo what a recent rater said of this, that it smells better than it tastes. The aroma is excellent, with a strong bourbon note that I could suck in all day. But in the tasting, I had a really hard time getting the spice (no chipotle spice to speak of) and the bourbon was too strong--too much alcohol dominating. Decent in many respects, including the mouthfeel, but out of balance in the tasting. Bottle.
