COMMERCIAL DESCRIPTION
Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Pours a thin black with a thick mocha head. Aroma of milk chocolate, roast, vanilla. Taste follows with peppers in the finish with a hint of bourbon and oak. Very nice but a bit thin

Bottle. Bottled on 03/04/16. Black bodied with a short tan head. Aroma is boozy with vanilla, molasses, caramel and some toasted coconut. Taste is peppery spices, Bourbon, vanilla, caramel, sweet malt, roasted malt, chocolate and soft toasted coconut. Body is medium-full with a strong, bubbly carbonation and warming finish. Ends with more Bourbon, vanilla, chocolate, spices, pepper notes, caramel, sweet malt, molasses and light coconut.

Bourbon, oak, coconut, and fudge nose. Clear brown, thick beige head, abundant glass coating. Bourbon, oak, prune, some chocolate hints. Vanilla and peppermint also present. Full body, soft carbonation, alcohol obvious. Tons of complexity, very boozy. Oddly, no chilies detected heat or otherwise. Much more of a bourbon bomb.

Pours dark unclear blackish with a darker beige head. Aroma brings some vanilla and straight bourbon smooth in the nose. Flavors bring big bourbon as well with some chocolate and light chile spice on the backend.

2016 batch. From the 650 ml. bottle. Black as night pour with a lingering tan head. The aroma brings out chocolate, dark sweet malts, raisin, and black licorice with a a touch of booze from the Bourbon Barrel aging I expect. No hot spice character as I anticipated. Bold, creamy body. The taste is sweet malts, chocolate, and black licorice but the hot Mexican spice characters are subtle and downplayed. They do show up but they do not overwhelm. An excellent beer.

Aromas of chocolate, cigar smoke, barrel wood, bourbon, cocoa, oak, charred dark malts, raisins, plums, cinnamon, toffee, prune juice and subtle chile heat. Pours pitch black with a very slim brown rim and moderate lacing. Taste brings smooth as silk chocolate, cocoa, brown sugar, cinnamon, spices and fudge upfront. Mid palate offers toffee, oak, bourbon, vanilla, barrel wood, raisins and plums. Finishes earthy and chocolate filled with residual bourbon, cinnamon and spice. Noticeable char and burnt campfire ash present among the palate as well. Overall, a very fine treat with lots of complexity. Much chocolate, cinnamon and spice define this beer yet, vanilla is slightly subdued. A rating.

Bottle. Dark with slow burn mocha head that diminishes, but sticks around. Aroma of cocoa, cocoa, cocoa. Some bourbony vanilla oak and a hint of chili pepper. Flavor is cocoa, bourbon, subtle vanilla, and even subtler but noticeable pepper. Mostly the heat, no real pepper flavor. Wonderful silky mouthfeel. Very slight heat. An enjoyable beer. At some point in the not too distant future, when there are so many BA beers that they can no longer sell out right away or charge $15-30 for bombers, I hope they still make them and charge more like $10. I’d buy a whole lot of these at $10. At $14, or $20 for Speakeasy Syndicate, or $33 for Eclipse, I really think a lot of people are going to lose interest in all but the very best ones.

Bomber into a pint glass. Pours black, with a small tan head that fades quickly. Nose is coffee, cocoa, and chili pepper. Taste follows. Taste starts with coffee and cocoa, then the peppers kick in, followed by a nice bourbon note on the finish. Excellent.
