Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Smoky aroma has roast malt, caramel and chocolate notes, with an overtone of bourbon - obviously from them Wild Turkey barrels. Comes out of the bottle a deep coffee brown that lets in a little daylight at the bottom and has a fairly thick light tan head. Luscious flavor has roast malt, coffee, chocolate, caramel and bourbon notes - and watch out for that alcohol kick, it’ll bowl you over like a luchador! Thick, smooth texture has a lively fizz and leaves a syrupy finish with a strong bourbon bite.

Keg at Sedona Charlottesville, 4/18/16. Dark brown, thin fizzy tan head, decent retention. Aroma of strong bourbon, vanilla, roasted malts, raisin. The taste is strong bourbon, vanilla, caramel, roasted malts. Medium bodied, low carbonation, too much barrel character.

Sampled on draft at Vintage Estate this beer poured a black color with a trace tan head that left minimal lacing. The aroma was floral hops, hot peppers, chocolate and bourbon. The flavor was sweet, toasty and malty with motes of molasses, bread crust, chocolate, bourbon and a hint of hot peppers. Delightfully complex. Very long finish. Full bodied and smooth. Alcohol well contained. Outstanding.

Dégustée en compagnie d’Alexandre. Liquide noir ne présentant que très peu de mousse à la durée de vie bien courte. Arômes de bourbon, de chocolat noir, de cacao, de noisette torréfiés. Bien que la bouteille présente un lutteur en plein combat et que ce stout soit décrit comme un "mexican stout brewed with chipotle" je peine à trouver le piment dans ce liquide qui me semble bien plus près du tiramisu que du taco. Très soyeuse et plaisante en bouche, le bourbon apporte chaleur tandis que le chocolat noir procure équilibre et rondeur. Je crois enfin détecter le piment en fin de bouche grâce à une douce bouffée de chaleur. Un très bon stout bien fait qui ne réinvente toutefois rien.

Bomber. Jet black, minimal head. Lovely, dark chocolate aroma, fudge, some oak and whiskey. Breathy, coffee beans on the tongue, some chocolate mint, sweet pepper, vanilla.... Very smooth, somewhat creamy, a touch boozy but of the bourbon variety.

Appearance and aroma are nothing special, but the flavor is divine. Judicious use of the booze barrels are subtlety evident and supportive of the bolder coffee, cocoa, black malt, flavors. Perfect palate. Fairly drinkable.

650ml bottle from Cork Keg & Spirits, brought by bananabi11, cellared for 2 months and shared with him at cellar temperature. Thx E! Chasing Clown Shoes, so a bit of a white whale. Black pour, brown head. Aroma has chocolate, caramel light chile, truffles. Taste is sweet caramel, dark chocolate, some roast. Medium to full bodied. Low carbonation. Blend is good. Some alcohol. The light chile is an interesting addition. Finishes well mixed between bitter and sweet. Clown shoes has really nice stouts. Big fan! 15
