This beer is made with imported malts of the highest quality and the best coffee in the region of Upper Mogiana. This coffee is purchased directly from the producer, roasted and ground according to our specifications and macerated in cold water only to then be added to the mash brewer. Using this method we prevent the coffee aromas lose its best owing to the high temperatures present in the brewing process.
The Demoiselle name is a homage to the great Brazilian Alberto Santos Dumont, whose family owned coffee plantations in the region of Ribeirão Preto.
Thanks to the American brewer historian Randy Mosher for precious insight into the use of coffee in brewing.

Pours black with a tan head. Aroma of coffee, toasted notes, chocolate. On the mouth, a lot of coffee notes, chocolate, malty, with a medium-light body and good carbonation. Overall, a nice porter.

Bottle. Pours dark brown, mahagony, with a red hue and full tan head. Good strong roasted nose, with coffee, toast and a surprising earthy and wooden note and quite spicy touch. Well balanced bitter dry taste surrounded by light sweetness. Medium bodied with medium carbonation and light sparkling in the tongue. Flavor is earthy and wooden as well, coffee and light chocolate hints along with a interesting Chilli like note and a hint of plum. Leaves a light bitter dry and earthy aftertaste. Very interesting profile with aroma and flavor of chilli without being hot or peppery.

Draft @ Delirium. Brune foncée-cuivrée, col crémeux café au lait. Arôme au nez un peu suret de café concassé avec un petit côté de baies rouges. Dominance reste centrée sur le café sans pour cela être trop surfaite. Palais est malté versant sur un profil soyeux agréable au fini café presque espresso, léger côté grillé. Petite note épicée que l’on retrouve souvent avec le café. Pointe de malt cara pils, pâle et une certaine amertume persistante de houblons plutôt nobles. Le tout est léger, frais sans avoir ce café qui devient trop présent.
