COMMERCIAL DESCRIPTION
Iowa is a wrestling state. For generations, clubs and high schools across Iowa have turned out champion wrestlers. Iowa State University and the University of Iowa have dominated the Division I collegiate wrestling scene. Take Down is our salute to that heritage. A classic Irish dry stout, Take Down’s backbone is Simpson’s two-row Golden Promise malt for sweetness and character, along with roasted barley and a little pale chocolate malt. English Fuggles and East Kent Goldings hops provide the bittering and Irish ale yeast adds authenticity. Like a well executed wrestling take down, Irish stout can surprise you, with a lighter body and mouth-feel seemingly at odds with its very dark color. Lower alcohol level also encourages you to wrestle with multi-pints of this dark-but-light stout.

Keg at the brewery. Nitro. Near black, ruby highlights. Dense creamy tan head, good retention. Aroma of roast, chocolate. Taste is roasted malt, caramel, coffee, dark chocolate. Medium bodied, smooth, mild lingering bitterness. Very nice.

(From notes) Draft at The Iowa Taproom, 3-16-2016. Typical color. Aroma is char, old coffee beans, chocolate. Flavor follows with a touch of molasses. Weak roast. Texture is indeed dry.

Medium in body with a smooth mouthfeel. (on nitro). Overall nothing earth shattering but it is to style and crafted well.

1qt mini growler from Urbandale Hy-Vee, in a Sam Smith pint glass. Aroma of sweet malted milk and caramel with fainter traces of roast coffee and dark chocolate. Pours oily black with huge bubbly ivory head that dissipates rapidly, which is the #1 thing that clues me into it not being Guinness. Moderate lacing, no effervescence on the glass. Lightly roasty and malty with a mild fruity, maybe even tomato-like sweetness. Very well balanced without any particular flavor element dominating or overpowering the others. Full-bodied and almost as creamy as Guinness, lightly mouthcoating with respectable carbonation making for very easy drinking. A respectable beverage for St. Patrick’s Day. Not quite as good as Guinness in terms of visual appeal (lacing), creamy mouthfeel or flavor intensity, but still a good beer. Slainte!

Nitro tap at the brewery. Dark pour with a big dense nitro head. Mild roast, medium to light palate, a little watery. Not bad, not great.

Very dark brown pour with about an inch of head. Smells like a Guinness. Carbonation is soft and very restrained-- almost cask-like. Light bodied. Taste is lightly nutty, some coffee and roasted malt. Finishes dry and a bit astringent. Closest I’ve found to a Guinness in a domestic brew. Good take on a dry stout.

On Nitro tap at brewery pours a dark brown/black with a creamy large khaki head. Aroma of dry roasted barley, with some chocolate and molasses. Smooth palate nice initial hit of roast, and slight hop bitterness in to smooth mellow chocolate and molasses. Simple, dry, and balanced. Nice!

Aroma is yeast/earthy, dark roasted malts and mild nuttiness. The flavor is dark roasted malts, mild/medium nuttiness, coffee and a slightly tart/dry finish.

Had this on draft at Confluence Brewery in Des Moines. Super creamy head. Sweet and nutty taste. Light berry backbone. Black pour. Pretty good
