Sampled on 10/16/2011 at Beer Revolution. This saison pours a slightly hazy medium to dark orange gold color from the tap. Medium sized white/beige foamy head, with decent retention and nice lacing. The aroma is fruity, sweet, spicy and yeasty. A medium bodied saison. The malts are fruity and sweet. Some yeast, some spices. The hops are herbal and spicy. Lively carbonation. A touch of wood and perhaps a hint of honey. Nice spicy saison. Light, clean and crisp. Starts sweet and finishes very dry. Mouthfeel is full and round. Finish is clean, crisp and dry. A: The beer pours a reddish-amber color with a finger of khaki colored head.
S: Smells strongly of pepper, wood, and yeast. There is a light fruitiness to the beer, seems to be black cherries. It’s very, very spicy, and almost everything else is overwhelmed save a slight grass note.
T: The spice is almost worse on the palate. Intense coriander and pepper flavors with just a dash of cherries. Light malt sweetness and a bit of yeast flavor. There’s an almost woody or dusty feel to this as well. A light tartness and mustiness on the finish.
M: Medium bodied with a medium carbonation.
O: In true Craftsman fashion, this was almost nothing as described or expected. Very strange.

On tap. Pours amber with good creamy white head. Aroma shows some lactic sourness, white pepper, tart cherry. Palate solid, perhaps not as dry as I like saisons. Flavor has milder bite, but still excellent integration of husky saison earthiness, sharp and textured malts (rye?), touch of acidity. Quite mature. Again, thanks to Patrick and Mark for letting me sample this at the brewery! Your generosity and hospitality was awesome! Glowing ember pour with a small eggshell head that left a chunk or two of lacing inside the glass. Fills the nostrils with lemongrass, funk, spicy black pepper, tropical fruit, and oak. Appearance: Pours a bright amber with no head.
Aroma: Tart cherry, sour funky brett.
Taste: Spicy yeast, sour bretty funk, cherry, subdued herbal hop and a little bit of oak.
Mouthfeel: Medium bodied, sticky and prickly.
Overall: A very interesting, bold, easy to drink beer.
I don’t know what phenolic means but I thought this beer was good. Pours hazy, reddish amber with a small white head, specks of lace. Smells fruity and yeasty and malty sweet with a hint of funk. Tastes funky and sweet, malty and yeasty, cereal malts and brett-nicety linger. Light body, good carbonation.
