COMMERCIAL DESCRIPTION
Like origami, Bonsai is an ancient tradition of Japan that promotes careful contemplation. Through gradual growth and cultivation of a small branching tree, such as the native kumquat, reflection may take place. We view our small craft brewery the same way, aimed at careful cultivation of craft beer flavor and culture. We will always be willing to trim back branches that may reach too far and too fast to preserve the quality of what grows. Please take a moment, while you drink this citrusy tart beer, to quietly reflect on growth, preservation and life.

UPDATED: AUG 19, 2017 On draft at the brewery. Aroma 8 /10: heavy citrus and wheat aroma Appearance 3 /5: opaque golden yellow, very little head Palate 3 /5: mildly carbonated, most of this is felt initially. Has a very puckering sour finish, imagine biting into a slice of lemon Taste 6/10: light citrusy and wheaty taate initially, but this one finishes a little too tart too quickly for me Overall 15 /20: slightly unbalanced palate and taste - too heavy on the acid at the end. Final: 3.5

750ml bottle. Big, bright, juicy kumquat notes. Hazy yellow tan body. Thin head fizzes away fast. Zesty carbonation. Bright. Really good. Big sour tones, lemony, rindy.

Sample from bottle at Hy-Vee Oktoberfest. Poured hazy golden with a white head. Aroma was sweet fruits, kumquat?, tangerine. Taste was tart and sour kumquat?, fruits, lemon, lime.

Draft/Fest. A- Tart, citrus cleaner. A- Yellow color, hazy liquid, white head. T- Tart, kumquats, oranges, sour. P- Light body, average texture, average carbonation, tart finish. O- Great beer and maybe their best yet. I like the unique addition of kumquats. Makes it really tasty and a little different. Refreshing for sure.

This is a pretty solid Berliner Weisse. I haven’t had a kumquat fruit in years, but there was a definite uniqueness to the fruity flavor. Sour, light acidity, sweet up front, and gold. Tried with Jess at the Nebraska Beerfest in 2016.

Cybercat (6434) - Georgia, USA - JUL 16, 2016
Pours hazy, barely translucent apricot with a thin eggshell head. Aroma features a strong kumquat note and fresh malt. Zing kumquat dominates the flavor while letting fresh malt and a bit of hops peep through. Mouthfeel has faint body but good fizz. Go kumquats!

750ml bottle. 4/15/16 bottle date. Appearance: Light golden, brilliant clarity, with a thick bubbled white head that dissipates quickly. Aroma: Sweet, stone and citrus fruitiness. Fairly strong with faint sugar. Taste: Light malt sweetness with a touch of citrus, turning to a quick, aggressively sharp sour with a slight funkiness and touch of white vinous flavor. Mouthfeel: Light bodied and highly carbonated. clean and crisp Finish: Very dry, with a lingering light stone fruit. Overall: A thirst quenching, strongly acidic Berliner Weisse with a nice contrast of sweet citrus, and a complimentary acidity. For a simplistic style, this beer has a well rounded complexity

Hazy golden pour with a nice off-white head. Nice sour aroma with plenty of wheat, a touch of butter/lactic, and plenty of fruitiness. Nice tart flavor with a bunch of tartness, wheat, and fruitiness. Really nice!

Sample at Waldo Hopfest 2016. Comes a hazy pale gold with a small white head. Aroma of citrus, grain, and yeast. Taste is lemon, kumquat (?), grain, and yeast. Very nice.

750 ml bottle purchased at the Crane Brewery in Raytown, Missouri. The pour is a hazed golden yellow with a thin white head. The aroma is tart citrus, fresh fruit and a natural tart and sour yeastiness to the back. The taste is just bursts forth with super fresh and natural kumquat fruit, citrus tart and the tart sour of the Berliner character. Beautiful soft grain in the finish. Perfectly balanced between fruit and sour tart. The palate is light bodied with active sparkly carbonation and the clean tart softly sour citrus fruit finish. Delicious, Crane is just nailing these fruited Berliners.
