COMMERCIAL DESCRIPTION
Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

UPDATED: NOV 1, 2017 Draft. Poured a clear golden color with an average frothy white head that mostly lasted with good lacing. Moderate sour and tropical fruit aroma. Medium body with a sticky tingly texture and soft carbonation. Medium sour & sweet flavor with a medium sweet & sour finish of moderate duration. This is a good beer for style.

Clear gold pour, miniscule head. Tart aroma, lemon, funk, very light guava note if any. Guava a bit more prevalent in the taste but secondary to tart lemon, dough, yeast, funky. Slightly astringent. Lighter body.

Draft. A hazy golden beer with a white head. The aroma has notes of guava, citrus fruits, and brett. The flavor is sour with notes of brettanomyces, guava, citrus fruits, and a bit of wood, leading to a tart finish.

A 375ml bottle bottled in August 2015, poured into a Cantillon ballon glass. It poured a hazy golden colour with a less than one finger white head that dissipated almost immediately and leaves only sparse to no lacing. Aromas of funk, sour, tartness and oak. Tropical fruit, mostly guava, passionfruit and mango. Tastes sour, tart and funky. Fruit is a bit light, but its there. Citrus lemon followed by some tropical guava and grapes. Lightly oaky on the finish. Light to medium bodied with moderate to high carbonation. Overall nice tart sourness but the fruit especially guava (since that is in the name) was on the light side.
