Nothing quite like a special bottle of Stille Nacht on Christmas! Pours nearly flat with a cloudy, rusty golden color. After a minute in the glass, a thin head with large bubbles materializes. The aroma is subtle and feels locked up... like it will break out with age. Right now, it is filled with cherries, oak, vinegar, caramel, and some moldy funk... incredible. On the palate, the beer has an almost oily texture that is cut through by the mild carbonation and the acidity of the flavor profile. The flavor is complex as notes of sweet red fruit, wine barrel (shock), lemon mix with others in a fleeting fashion... almost ethereal. Finishes mildly tart, but Id never call this sour. Killer beer right now and will age with the best of them, for sure.

Bottle opened up at the 2016 Ottawa Year-end Gathering. Clear copper with a beige head. Red wine and oak dominate at first but then settle down once things open up, allow room for yeast, fig, candied orange peels. Moderate carbonation and full body, smooth, dries out with a nice boozy finish. Liked this one.

Bottle thanks to Douglas. This was a big time want! A: Opaque brown with a creme color head and lacing. N: Leather, caramel, oak, red wine, oak, peppercorn, clove, grapes, toffee, vanilla, fig, raisin, cherry, sherry and honey. T: Sweet and soured. But not in that infuriating infected way. M: Medium-heavy body, very sticky, spritzy carbonation, no alcohol. O: Beautiful beer. Its so well rounded and the bordeaux adds so much to its already sterling profile.

UPDATED: DEC 24, 2016 Bottle thanks to Ayrton. Pours a mostly clear red orange color with a large white head. A wonderful woody fruity vinous oak. The flavor is big sweet cherry, oak, rich red wine. Lovely. Big sherry flavor. So smooth, no heat. The barrel is wonderful here. smooth and melodious flavors. Decadent. I could drink a lot of this. Superb Belgian beer.

Rating #3500, my 400th Belgian rating. Bottle, leaking cork, but still fine. Amber color with white head. Aroma is nutty, sherry, vineous. Taste is vineous, tart, figs, sherry, red wine, nutty, so much complexity. Medium to high carbonation. Totally worth its hype. One of the best drinks Ive ever had.

Bottle, courtesy of SinH4, many thanks! Pours hazy amber. Aroma is strong wine barrel, but also sweet. Body is heavy boozy, vinous, fruity, even a little sweet, but also a little sour, candy, lively to fizzy carbonation. Palate is rather light, even tart, lingering with the wine characters. Absolutely worth the hype, an outstanding beer.

A hazed dark amber ale with a thin white head. In aroma, nice scotch like offering, woody notes, light grapeskins, musty notes, very nice. In mouth, a nice sweet fruity malt with white grapeskins, light white wine notes, light alcohol warmth, light tannins, very nice. Bottle at Ottawa Xmas gathering 2016.
