COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Aroma of spicy and banana esters. Flavors of chocolate and various candies (mostly sucre d’orge). Big beer but still mighty drinkable. Creamy mouthfeel with restrained carbonation, really masterful of De Dolle! Alcohol is fairly well hidden manifesting only with a slight tickle on the tongue. Highly enjoyable brew by De Dolle, anyone should seek this one out!

UPDATED: DEC 12, 2017 Orange, very hazy. Aroma has dried fruit and yeast. Quite High in carbonation. Taste lots of figs, dates but the sweetness is extremely well balanced by yeastiness and the bitterness that grows at the end. Exceptionell!

The aroma has something from real normandian cider, appel-yeast-alcohol . A hint of lemon and cinnamon too. The beer has a red-brown golden colour. Little head. Tastes bitter balanced out with candisugar. Than the applecider again. Also a hint of citrus again and a bit of cognac. Long bitterish last. Complex beer. Savoury. Definately special.Pretty classic.

Thanks to Vince_88. Dobre piwo.

At Café Botteltje, Ostend. Pours hazy golden/orange with a lasting, diminishing, frothy, off-white head. The aroma contains caramel, (white) sugar, apple, orange, honey, spices (ginger) & hops, vanilla, alcohol. It tastes medium to heavy fruity & sugary sweet, light to medium spicy bitter and very light sour, with a sweet and alcoholic finish (warming, not wry). Full body, oily texture, lively carbonation. Very fruity, boozy, complex; an explosion of taste.
