COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Troebel donker geel bier met schuim. Smaak is krachtig, kruidig en zoet, kandij, drop, anijs. Licht bitter. Blijft lang hangen. Top bier wat ook in de zomer goed smaakt.

Bottle from de Caigny Dranken in Essen, Belgium. The beer is hazy golden colored and has a stable white head, with good carbonation. The aroma is malty, with notes of caramel, candy sugar and honey, but also has some fresh hop notes with tones of citrus, apples, bananas, dried fruits and some spices and yeast notes. The taste is full bodied and sweet with malts, caramel and honey and goes to a light hoppy bitterness with notes of yeast, fruits, citrus peels, spices and yeast. The finish is light bitter with some nice warming alcohol.

Bottle from Hops and Crafts Exeter. Pours slightly hazy gold with a big white head. Aroma of candy sugar,,banana,fresh bread ,clove,caramel,pepper,pear& orange peel. Complex Taste of orange,caramel,marmalade,banana,fresh bread,marzipan ,pear & candy sugar . On the light side of medium bodied,nicely carbonated, the finish is bittersweet & dry with more citrus,candy sugar,bread,pear ,booze ( but well hidden for the strength)& a growing bitterness. Class !!!!

UPDATED: JAN 3, 2018 En rigtig god juleøl. Smagen er meget syrlig og samtidig en smule sødlig, mens eftersmagen er frisk og syrlig. Luner en smule i halsen efterfølgende.

UPDATED: JAN 15, 2018 Аромат очень фруктовый и цитрусовый. Цвет глубокий и красивый как у хороший ипы. Пиво сильно пенится. На вкус чувствуются спелые фрукты; Ананасы,персики, корка апельсина и мандирина. Также ощущается кориандр. При это напиток весьма крепок. Послевкусие длительное, но при глотке иногда можно почувствовать алкоголь. В целом один из лучших Бельгийских элей что я пил.

330ml bottle on Christmas Day evening. Pours hazy gold, medium off-white head. Strong boozy rich aroma, good overripe stone fruits, caramel, desert wine. Taste is similarly rich with yeast, candi sugar, apricots, stone-fruit, marmalade and vinous notes. Intense, complex, full-bodied.

33cl bottle at home, bottled in 2016. Appearance: slightly hazy golden with medium, white head. Aroma: very sweet! Dried apricot and apricot jam, even a bit dusty, some funk maybe, hint of raisin, pear, light fruit esters and a trace of nutmeg and spices. Taste: high sweetness and medium bitterness. Notes of apricot jam, grains, sweet malts, alcohol. Palate: medium to full bodied, oily to sticky texture and medium carbonation. Very sweet. Will keep one in the cellar for a couple of years.

UPDATED: DEC 26, 2017 2014 bottle opened on Christmas 2017. At the beginning the sourish green apple and lactic flavors were a bit too much but after spending some time in the glass this beer opens up and reveals all of its complexity. A ton of sweet fruit with a slightly bitter finish to balance the sweetness, with the alcohol perfectly balanced despite 12%. It probably will be even better after a couple more years in the cellar. Definitely a classic.

UPDATED: DEC 24, 2017 From a vintage bottle, into a tasting glass. Nose has some funk, apple cider, yeast, cinnamon, nutmeg, clove. Medium body, slightly hot, some acidity, low carbonation, sweet with a very dry finish. Really nice beer, especially on Christmas Eve!
