Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Has a lot of fruit and sweetness of a quad, but it’s blonde and easier drinking. Pours light yellow with good head. Bright sweet, fruit, think apple or peach, a good bit of sugar, and a lot of yeast before a dry finish. way to easy to drink for the abv. Good stuff.

At Café Botteltje, Ostend. Pours hazy golden/orange with a lasting, diminishing, frothy, off-white head. The aroma contains caramel, (white) sugar, apple, orange, honey, spices (ginger) & hops, vanilla, alcohol. It tastes medium to heavy fruity & sugary sweet, light to medium spicy bitter and very light sour, with a sweet and alcoholic finish (warming, not wry). Full body, oily texture, lively carbonation. Very fruity, boozy, complex; an explosion of taste.

UPDATED: AUG 8, 2017 2016 Bottle at Abeey N'8 Orange colour. Low carbonation. Ester, spicy, candy sweet. No booze at its high abv. Nice beer to warm yourself.

From old tasting notes. Garnet colored brew with just a trace of a white head. Intense apple-like fruity aroma. Rich cider-like malt flavor is sweet and sour with a hint of hop flavor in the finish. Caramel and honey underlie the uniqueness of this Christmas brew.

330 mL bottle shared with ebone1988. Vintage 2015. This bottle came from Jorrit. Thanks man. The pour is a darker golden orange color with a huge pillowy, frothy white head and a couple spots of lace as it falls to a thicker ring and film. The aroma is yeasty and malty up front with a bready spice and a hint of some darker fruits. There is a grain and a little bit of alcohol present. It’s surprisingly simple. The alcohol comes through. The spiciness and a light yeasty malt really control it. There is a sharper fruitiness to it and a heavy dryness. It’s interesting. The mouth feel is lighter bodied with a soft carbonation and a lingeringly sweet and yeasty malt with a slight alcohol. This is an interesting brew. 6 4 7 4 13

Bottle shared with koleminer20, for the book. 2015 Vintage. Aroma is ester, slight sour, fruity, spice, champagne, dry, slightly hoppy, earthy, good. Appearance is darker amber golden, light tan head, hazy. Taste is ester, sweet bread, earthy hops, champagne, woody, spices, pretty good. Mouthfeel is medium body, light carbonation, estery wine-like dry aftertaste. Overall, I expected a little more but it’s pretty nice.

Drank a 2014 bottle 06-07-2017 while writing. Very good! Blond beer, fading foam. Taste feels like a very rich combination between sweet and sour.. can’t really describe it in another way. Nice one.

Kolor pomarańczowo-bursztynowy, zamglony. W szkle pływa cała masa farfocli. Po odkapslowaniu piana wychodzi z butelki. Po przelaniu do szkła natomiast nie prezentuje się zbyt okazale. Jest lekka i zwiewna i szybko opada do cieniutkiego łańcuszka. Krążkowanie całkiem spoko. W aromacie mnóstwo cukru trzcinowego, miodu, karmelu, kandyzowanych owoców. Trochę też świeżych brzoskwini i moreli. W drugim rzucie jabłka i gruszki. W smaku bardzo zbliżone do zapachu. W pierwszym łyku uderza wysoki poziom cukru, karmelu i cukierków ziołowych. W drugim rzucie trochę belgijskich drożdży, przypraw i ziół. Dość wysokie nagazowanie, tekstura średnia do niskiej. Alkohol w pełni zamaskowany. Trochę zapychające, trudno mi stwierdzić czy to wina wysycenie, czy po prostu taki profil piwa, czy może obie rzeczy. Wybitnie słodowy trunek, mocno przyprawowy, ziołowy, ale i owocowy. Doceniam jego wartość, pomimo, że nie jest to mój konik. Polecam wszystkim marudziarzom jako wyznacznik stylu.

Bottle from a friend, vintage 2013. Amber color, white head. Bittersweet taste with citrus, sour apple, earthy notes, wood, ripe fruits, yeast and cookie dough. Bittersweet finish with citrus, ripe fruits, wood, toffee, apple, yeast and cookie dough. Excellent Belgian strong ale.
