The aroma has a definite cognac character, along with notes of nuts, oak, chocolate, roast, toast, and earth. Heavy cognac flavor, with chocolate, toasted malts, earth, tobacco, and brown sugar. Pitch black bit dark brown and quite foamy head. Clear cognac aroma, which is lovely in this beer. Also raisins, cream, vanilla, some roast and a bit of alcohol. Medium sweet but balanced taste. Extremely smooth body, warming at the finish. Develops well in the mooth. Not the most powerful or roasted, but rather a unique warmer. 33 cl bottle, almost a year old. Dark brown with coating tan foam. Nose is chocolate cake, raisin, light cognac and hay. Medium body with an airy tingle. Bottle, 05/30/2012, thanks to Jeffo. Pours black with a massive, pillowy tan head. Aroma of sweet milk chocolate with light roast, the cognac treatment clearly present with grape/plum-like overtones, subtle vanilla popping in, and surprising note of citrus hops in the end. Taste is more conventional, moderately sweet chocolate, just a touch of cognac-influenced dark fruits, with light roast offset, coffee notes, some alcohol in the finish. Full palate, fairly carbonated, barrel notes start to build up after a few sips. Nice brew from de Molen, but perhaps not their best- flavor needs to catch up with the nose.

Aroma’s: Sweet, chocolate, roasted malts, cocoa, alcohol, light cognac (mostly retronasal) Flavor is medium sweet, alcoholic, bit ash. Strong alcohol feel, prickly & burning. Full body. August 2011 bottle at Nya Tröls in Malmo. Deep brown body with a quick-forming light brown head. High effervescence requires a time of swirling agitation to bring the carbonation down to suit the body, otherwise it’s overly frothy and fizzy and the yeast phenols, present in all other high gravity De Molen beers tried before, become excessively dirty. When the carbonation meets the body the malt is presented sticky, fluffy and pillowy, leaning to the sweet side. The cognac soaked oak along with the heavy malt provide a sweetened date/plum/grape note to go with the chocolate mousse and roast. Alcohol, mentioned at 12.5%, never dominates, always playing in the background. It’s well-balanced sweetness, alcohol and malt firmness are what makes it so good. Completely black with a firm, staying, creamy, beige head. Aroma has lots of fat milky chocolate, sweet oak, cognac, light roasted. Low carbonation, fat and creamy mouthfeel. Flavour has lots of delicious, luscious, chocolate, roasted, soft, elegant. Long, lingering, malty bitter finish with a soft vinious touch.
Bottle. Pours a black color with a small longlasting off-white head. Has a roasted malty fruity chocolate and weak cognac aroma. Brune foncée, col fin beige/moka.
Arôme de malt, choco, caramel, le tout sur un bouquet Cognac boisé, note de grains voire de noisette? Houblon est présent également et confère une légère pointe d’amertume.
En bouche, malt grillé, léger cara/choco, le cognac est en retrait et se ressent par le profile de copeaux de chêne. Pointe toffee noisette, le tout étant collant aux lèvres. Le houblon est fleuri voire citronné rajoutant une fine amertume en fin de bouche. L’usage de copeaux en lieu de barrique s’en ressent pour une présence plus faible.
