With 4 years of aging it did not die as much as expected at all! Smells Greg as Eric pours it into the glasses, some sugar candi funk and Brett. Pours bring orange with a small white head that dissipates quickly. Flavor brings some lightened funk but still present, wild yeast for sure with a nice sweetness. Bottle; Pour is a slightly murky medium gold, with a modest fine bubbled white head into this glass. It retains on the average side, leading to a haze with some spotting presence here. It’s not the best looking saison by any estimation. The nose is heavy bretted notes of pineapple and dank basement, but those elements move to lemon grasses and baked bread by my estimation. The flavor profile is more lemon grass, white pepper spice, moving to fairly thick mouthfeel, dank and damp notes from the bretted character, and ultimately finishing out clean, albeit watery, and dry here. 750mL C&C poured into teku glass. Nice strong medium sized head with a slightly slick golden color. Big bretty nose and not that horrid goat’s oil Brett usual for De Proef. Brett is a bit oily but more like slick funk. Thick herbal Belgian esters near the Brett. Flavor has a sweet but lean sweet backbone surrounded by herbal thick Brett. Soft and felt on the cheeks.

Bottle split with Ray at Zorbas. Pours a hazy gold with thick frothy off-white head. This has aged well. Big bretty aroma, some lemon, honey, hay, pepper, coriander. Medium body and carbonation. Dry finish, slight tartness. I’ve tasted one about every year and I think it is peaking now. I still have at least one in the cellar I’ll hold on to for another year. Bottle. Moderate malt and hop notes of hay, cereal, and lemon, heavy barnyard and musty for the yeast, with coriander in the background. Head is average size, frothy, white with some slippery lacing and is mostly diminishing. Color is hazy light to medium amber. Flavor starts faintly sweet and moderately acidic, then finishes lightly acidic and bitter. Palate is medium, watery with a fizzy carbonation. Poured from a 750ml bottle. This is huge brettanomyces yeast showcase, lemon rind, wet horse blanket, some rubber notes, spicy, earthy, grainy, minty, alcohol heat. This is funky saison, with some rough edges. Dry with a bitter finish.
