"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Can thanks to Sarah! Pours a hazy pale yellow with a white head that lasts throughout the beer. Aroma has a good amount of flora and sweet wheat with a touch of clove and lemon underlying. Flavor starts with wheat and light flora with a touch of clove and a hint of tart lemon in the finish.

Can. Pours hazy yellow w thick white head that laces and loads of sediment. Nose is pop of citrus, carbonation. Taste has more depth with fresh sage and even mint herb notes. Refreshing.

Pint can thanks to Errl poured into a tulip glass. Pours a hazy yellow with a white head of foam. Pretty nice retention and lacing. The aroma has a lot of lemon zest personality coming through. Some other esters come through like cardamom and ginger, but that lemon zest is just in charge with this beer. The taste is very dry and lemony. I want to say pine-sol, but that would make a person think its chemically, but it isnt at all. The lemon comes through very pleasantly making the beer very refreshing.

16oz can, Opened this for a Wit and got a mixed Saison and Wit, more saison to me than wit but still some peaks of spice coming through, lackluster funk belgian style.. not bad.

Hazy golden straw pour with a white head. Smells of lemon, peach, coriander, and sugar. Some cracker, bread, yeast, and perhaps rosemary. The flavor is very heavy on the lemon. Some coriander spiciness, rosemary, sugar, and bread. A touch of yeast, orange, and cracker.

Pint can, hells yes! Pours a cloudy yellow color with a large white head. A nice peppery and fruity nose. The flavor is clean, big lemons and oranges, some light rye, tannins, pepper and more banana and lemon zest. Good. Robust.

Hazy yellow, thin compact head. Nose is lemon, cardamon, and Belgian yeast. Middle is bitter lemon rind and citrus hops. Finish is dry and yeasty. Saison in taste, wit in alcohol...different.
