COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

tmoreau (4363) - Lombard, Illinois, USA - APR 21, 2016
Shared 16.07 oz. bottle poured to snifters showing a fairly clear, mahogany color, with a presentable layer of bubbly, tan head foam, and dots & dashes of lacing. The nose was woody/oaky, esters as dark cherry & concord grape, with a rather vinous nature. Medium bodied, with moderate carbonation, the taste was on the sour side of tart, along with a finishing dryness that created a pleasant puckering on the palate. A fine example of a quality Flanders Brown Ale/Oud Bruin.

Old note. On tap at Crest in Clintonville. Random notes: leather, light vinegar, cherry, wine, bit muddled, little tinny. fairly thick. light to moderate sour.

Nickls (2535) - Alexandria, Virginia, USA - DEC 14, 2015
Bottle. Deep dark brown cola with ruby orange highlights. Sweet toffee, malty, slight sour, some wood as well in the aroma. Flavor is more interesting, balsamic sweetness, acetic burn and some vinegar. Medium to fuller body.

Sample at GABF 09/26/2015, thanks to my sis for assistance with note-taking. Reddish-brown color with a medium light beige head that recedes steadily. Strings of lacing. Aroma of cherries, oak and malt. Medium body with flavors of funky cherries, yeast and malt. The finish is fruity with a dark cherry aftertaste. Above average overall.

Sampled at GABF 2015. In the tasting glass was a hazy dark red with oan off-white to beige head. Nose of cherry, funk and wood. Medium body. Flavor is tart, lots of funk, wood for sure, and a tart funky finish. I like good sours and this one is great.

Bottle thanks to Rainer. Pours a hazy brown ruby with small beige head that lasts. The aroma is strong wood, dark cherry, vinegar. Medium mouth, funky, cherry skin, vinegar, tart, good.

a well done if not standout sour. pleasant funk and oak sour twang on the palate and in the nose. some fruit, leather and cola in there as well. would be a great intro to the style beer.

Refrigerated 0.5 L brown bottle poured into a glass. Clear deep golden, medium body, low carbonation, and no lacing. Taste is tart, wood, nice vanilla.
