BARRELS #1 & #2: Sour Trappist Wheat Ale Double sour barrel aged for over 17 months (6 months in barrel #1 and over 11 months in barrel #2). The base beer is a Wheat Ale primarily fermented with Trappist ale yeast before undergoing secondary spontaneous wild fermentation and aging in the barrel using DESTIHLs St. Dekkera Reserve process. It has a golden-light amber color, light body and maltiness and low hop bitterness, flavor and aroma. Fruity-ester and funky flavors and aromas are moderate-high with tartness/sourness akin to a green apple and other tart fruit which is achieved from barrel aging with Brettanomyces, Lacto and Pedio. IBU: 14 Color SRM: 4

Pour is a golden haze with thin head. Nose is sour cherries/ bret with a musty note. This beer is quite sour with a slight paint thinner finish. It was an enjoyable sour, but a bit too acidic.

Draft (labelled Kurs Blanc). Wood, lactic lemon, and wheat malt aroma. Golden yellow with moderate head. Funky sour lemon and mildly bitter herbal flavor. Okay but not very exciting.

Unlabeled bottle (thanks to hannont for sharing)... Poured a pale, golden yellow/orange with a thin head. Nose had mild brett and funk. This was quite third quenching, dry, very clean. Some noticeable brett and musky funk. Not overbearing though with a lactic acid, lemon, citrus acidic balance. Especially towards the finish. Quite a treat.

Bottle shared by Jay? Pours a hazy amber toned body with an off white head. Aromatically funky cherries, red wind notes and a hint of cherry fruit tones. Mild nutty body, some light apple cider y notes, with a hint of acidity in the finish. Average for a flavorful style.

Tasted on draft at FoBAB. For what it is worth, Destihl was the pleasant surprise of the day. This one pours cloudy pale yellow with a n average white head that leaves some lace. The nose is wheat with a hint of sour funk and light citrus notes. THe flavor is super sour with wheat, yeast, citrus, and a very nice vinegar taste. The body is light with average carbonation and a long sour finish.

Bottle courtesy of a trade with Kan that I took to Pauls tasting. Pours a hazed ruby tinged amber with touches of a white head. Nice sour funk, barn yard notes. Crisp acid, very clean and simple. Nice vinegar and acid. Sweet and tart with nice tang. Lovely and well balanced. Absolutely awesome. Thanks again Kan for the hookup on this one.

Bomber shared by J. Pours a hazy peachy gold with a thinning off white head. Aroma is peach, fruity esters, good bright spritzy lactic sourness, some aceto coming in as it warms a bit- lambic-like funk, bretty wild, barnyard, lemonzest. Flavor is peach sourness, lemon, lactic, grass, earth, big funk, good spritzy acidity- similar to a Lost Abbey sour- like duck duck- tea and lemon acid, lactic citric, funk, light metallic, and some earthiness- fairly refined and clean- pretty good.

Draft at FoBAB. Pours hazy gold. Powerful funky nose. Lots of acid, barnyard funk. Tart fruit, really well done sour. I liked it.
