COMMERCIAL DESCRIPTION
This reverse engineered, wild Berliner-Style Weisse is a German-style sour that is very pale in color and is the lightest of all the German wheat beers. The unique combination of wild yeast and lactic fermentation yields a beer that is acidic, lemony-tart, highly attenuated and very light bodied. The carbonation of this Berliner Weisse is high, and hop rates are very low.

12 oz. can poured to a tulip at Ellyn’s Tap & Grill in Glen Ellyn, IL. showing a mildly hazed, light gold/straw color, with white foam that quickly reduced to a ring & film, and spots of lacing. The nose was slight yeast, soft wheat, a ripened scent of lemon & rind, tartness, with a fleeting hint of candied sweetness. Light to medium bodied, the taste was lemony, puckering tartness to lactic sourness, lively, almost belch prompting effervescence, and a dry finish. By no means a timid Berliner.

Can - Pours a hazy very pale gold with thin white head. Aroma of citrus fruits (mainly lemon), white bread, and some odd funk. Flavors of tart citrus, melon, green grapes, green apple, and heavily carbonated like a soda fizz. Hops aftertaste.

Cloudy pale pour with a very thin head. Aroma is fruity and acidic. Light bodied. Acidic, but not overly done. A hint of citrus with lingering tartness. Very easy to drink. Dry finish. Good, but not mind blowing.

On tap at 109 Brews. It poured a hazy yellow color with a white head. The aroma was of citrus, straw and some wheat. The taste was similar to the aroma with more citrus, some tartness, sour and light sweetness. It was light bodied with a crisp finish. Good stuff.

Can to glass - pours like a fizzy Chardonnay, nice white head, quick dissipation. Aroma of, nectarine, white grape peel, souring lemon yogurt, taffy. Good grief, so sour and dry but great. More lemon on the tongue, sour apple but also an underlying sweet graininess. Great!

Can. Pretty, deep pastel gold with a low, fine head. big lactic yogurt nose,lemon. Very tart and lemony flavor, quite sour actually for a Berliner. A bit salty, lemon, milk. Good and summery.

Can. Thanks to Mike. Sour, pickly, sourgrass flower aroma. Light hazy apple juice color. Super tart initial, thin wheatiness, with a bit of tingly white wine-like notes. Strong sourness all the way through. Thin, dry, and acidic. A bit overdone perhaps for a Berliner, but still very nice.

Can. A- Lemon, vinegar, sour, subtle wheat. A- Pale Yellow color, hazy liquid, fizzy white head. T- Vinegar, lemon, tart, sour, acidic. P- Light body, average texture, medium carbonation, tart finish. O- Really refreshing, but also really tart and sour. Quite acidic too. Great after mowing a lawn but I couldn’t down several.
