Lactobacillus and the sweet fruitiness of plums and figs evoke ice cream(!) in the nose, while the flavor profile surprises with its citrusy tartness and apple-like juiciness. This is highly creative and pleasant, but it needs refinement (this was the first batch).
Further Personal Perceptions :
-A creamy head of foam covers the muddy beige.
-The frothy foam and dry, slender mouthfeel are quite unexpected since the aroma recalls mostly a fruit smoothie.
-The herbal shiso character is rather muddled, overtaken by the fruit, yeast and lacto.
-The citrusy tartness is mild, refreshing.
-Lactobacillus galore! A nice brew to discover what lacto can offer for the senses.
-This brew has lots of potential for (Asian) food pairings.
On tap at the brewpub.
Draught at Dieu du Ciel, Montreal. Golden - orange, cloudy, small to average and mostly diminishing head. Moderate, malty - wheaty and lightly sweetish aroma, sourness and fruitiness with plums, faint spiciness. Body is light to medium, malty - wheaty and dryish flavor, sourness and some fruitiness with plums. Finish is average, malty - lightly wheaty and dry, sourness with some fruitiness - faint plums, faint spiciness. Aroma and flavor are not in balance - flavor/finish lacks the fruitiness and plums - nice one though. rodenbach99 (4572) - Longueuil, Quebec, CANADA - SEP 22, 2011
