On tap at Bar Volo, the DDC tap takeover. Cloudy yellow and lacey, this smiled most mildly of plum skin (thanks Peter) "wine", a tad alcohol in nose. Medium mouthfeel. A rich liquor quality taste, a great sourness if you are into that sort of thing, a sipper and a continuous sipper. A palate finisher best left to the end of the evening, and leaving its effect many hours later.

2011-09-24. Hazy golden pastel body (plum coloured?) large creamy off-white head and lace fades. Aroma of musty plum, mild funk, more fruity plum as you go. 7+ Flavour has a good amount of plum fruit with nice sourness throughout lingering mild sourness and a plum pit like note in the finish. 8+ Smooth average plus bodied palate. Rather nice, very drinkable. On tap at Volo, Toronto

My Bottom Line :
Lactobacillus and the sweet fruitiness of plums and figs evoke ice cream(!) in the nose, while the flavor profile surprises with its citrusy tartness and apple-like juiciness. This is highly creative and pleasant, but it needs refinement (this was the first batch).

Further Personal Perceptions :
-A creamy head of foam covers the muddy beige.
-The frothy foam and dry, slender mouthfeel are quite unexpected since the aroma recalls mostly a fruit smoothie.
-The herbal shiso character is rather muddled, overtaken by the fruit, yeast and lacto.
-The citrusy tartness is mild, refreshing.
-Lactobacillus galore! A nice brew to discover what lacto can offer for the senses.
-This brew has lots of potential for (Asian) food pairings.

On tap at the brewpub.

on tap at brewpub. cloudy gray-yellow, nice white head, good retention and lacing. nose is tropical, pineapple, acidity. taste is oddly but pleasantly tropical, candy-esque with a medium sourness. average carbonation, light to medium body. nice one!

[3989-20110924] Tap. Odd fruit skins grass aroma. Hazy, light orange tan body with a long-lasting creamy off-white head. Sour plum is prevalent and tasty but flavour also hints at fresh playdough. Medium body has a subtle sour foundation. Really interesting. (6/3/7/4/14) 3.4

Tap at DDC. Appearance is a weird brownish yellow milky pour with white head. Very lactic aroma, old cherries, lemon, milk, plums. Flavor is nice and tart, lemony, yoghurt notes, fruity. Sprtizy light palate, good. Very unique, not quite appealing to the eye, but certainly good.

Draught at Dieu du Ciel, Montreal. Golden - orange, cloudy, small to average and mostly diminishing head. Moderate, malty - wheaty and lightly sweetish aroma, sourness and fruitiness with plums, faint spiciness. Body is light to medium, malty - wheaty and dryish flavor, sourness and some fruitiness with plums. Finish is average, malty - lightly wheaty and dry, sourness with some fruitiness - faint plums, faint spiciness. Aroma and flavor are not in balance - flavor/finish lacks the fruitiness and plums - nice one though.

Hazy honey gold hue, with a white head, nice sour yellow plum, tropical fruit nose with some light tart, acidic lemon, star fruit, green apple, rhubarb notes, with some faint musty, lactic, stewed zesty lemony plum accents in the aroma follows through on a medium-bodied palate with a juicy, fruity yellow sour plum, light funky character with a mild tart green apple, star fruit, musty, tartness backbone, and a citrus lemon acidic, lactic undertone, leading towards a good fruity, zesty, plum sourness finish.
