This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Dark brown beer with hardly any carbonation or head. Hardly any aroma. Strong taste of dark burned malts, some caramel and a lot of alcohol. Herbal, spicy but all ruined by the overwhelming alcohol warmth making it very unbalanced.

Bottle at Beer 4 Bunnies in Bologna-Italy. Reddish caramel pour, ivory lacing. Nose: under spirit cherries, alcohol is relevant, hint of chocolate far away. Mouth: brandy, amaro digestive, amaro herbs, menthol.

Translucent walnut. Deceptively bright nose of cinnamon and slight bitterness. Slightly oily palate with a sharp alcohol bite under charred walnuts. There’s a lingering creaminess that’s unexpected and helps balance subsequent sips. Sweetness reveals itself as you drink. Interesting and grows as you work through the bottle.

[email protected]’Connel’s, Tampere, Finland. Medium/strong, slightly pungent and sour aroma with bourbon, overaged dark fruits and some malts. A hint of lactose. Dark amber color with small light beige head. Strong, averagely balanced taste with bitter/sour notes of overaged dark fruits, plum, raisin and bourbon alcohol and some malty flavors. Medium taste spectrum and medium aftertaste with malty dry fruits. Sourness and sweetness in nice balance. Medium body with light/medium carbonation. Overall, distinctive and rich product with good implementation of malts.

Pours ruby red, almost brownish, with little tan foam. Aroma is alcohol, phenolic, wood, sort of rancid dark fruits. Flavour is phenolic, alcohol, wood, lot of astringency, spices with a bitter dry finish. Medium body. Oily texture. Really disappointed by this one. Quite undrinkable.

Tap at Clubhouse BFD. Pours murky brown, tan head. Aroma is fig, raisin, plum, dark fruit, esters, toffee, sweet. Flavor is plums, figs, raisins, aspirin astringency in the middle of the mouth fades into the finish with a bit more astringency that isn’t good. Slightly oxidized note. Ehh. Not great.

Nötig i smaken, lite brända toner. Snäll beska och lite torr avslutningen. Helt ok.

12oz bottle to tulip. Pours clouded brown, short tan froth head. Aroma of raisin, brown sugar, booze, maple. Taste of same with oak and biting whiskey. Mouthfeel is mod-thick syrupy, norm carb.
