My Bottom Line :
Vomit-soiled feet are cleaned by citrus fruit juices and their tartness in this guttural Wild Ale.

Further Personal Perceptions :
-A sheet of foam stands atop the cloudy pale amber.
-Butyric acid is evil and should never be allowed to touch my glass. That aroma was putrid.
-Thankfully, the flavor profile shows no signs of the cheese-laden vomit odor.
-I have trouble believing butyric acid somehow "appeared" since this beer was first served... Which means some people are actually liking this aroma quite a bit... I don’t get it.
-This is obviously nowhere near the elegance and definition of the Symbiose #2.

On tap at the Dieu du Ciel 14th anniversary party, pours a clear dark amber with a medium white head. Aroma of tart light fruits and some wild yeast. Flavour of dry dark fruits and a massive puckering sourness to finish. Massively sour with a mix of light and dark fruits. Quite good, but the sourness is for me too puckering.

Verre de 12 oz, à la brasserie lors du 14e anniversaire. Arômes peu invitants de petits pieds et de vomissures (acide butyrique). On retrouve également des brettanomyces. Robe dorée et trouble, effervescence moyenne et légère dentelle. En bouche, la présence d’acide butyrique est moins repoussante qu’au nez, mais demeure tout de même dérangeante. La base maltée est relativement corpulente et les brettanomyces contribuent des touches de foin sec. Finale lactique d’intensité moyenne. Bof ...

In short: A well malted sour semi-fruity amber ale that is surprisingly easy to drink despite its intensity

The look: Cloudy amber body topped by a medium beige head with good retention
In long: The strong nose leaves no doubt as to the nature of the beer, this is a sour ale, plenty of lacto and citric acidity, a certain sweaty character, a mix of fruits ranging from raspberries to young apples. Taste has pretty much all the above mention elements but also adds oaky dryness/astringency and also the beer is a little less sour than expected. Sourness level is still in the medium+ range but with the solid crunchy malt backbone it remains quite easy to drink for the style. There is fruityness in taste but it is less defined than in the aroma. The most pleasant aspect of this beer is really how it can be quite sour while still providing a tasty crunchy semi-sweet slightly toasted malts in a full fluffy and lively body. God I hope none of my ex ever move within 200 yards of Dieu Du Ciel and I can no longer legally go to my favourite brewpub.

Cloudy amber hue, with a white head, mild wild yeasty lactic, fruity sour tart red berry nose with a wet red wine tannic, wood barrel, faint juicy acidic lemony accent in the aroma follows through on a medium-bodied palate with a mild yeasty wild funky, sour green apple, light tart rhubarb fruity, lactic yogurt character with some faint wet tobacco leafy, musty grape, light sharp red berry, tartness flavours, and with a wet oak barrel, faint vanilla, bourbonish undertone, leading towards a mild fruity acidic, lactobacillus yeatiness, sour lemon juice citrusy, subtle vanilla oakiness finish.

A hazed amber ale with light pinkish hues, and a thin lacing white head. In aroma, a light sour mash with lactic notes, epsom salts, sour cherries, very nice. In mouth, a beautiful sour ale with lactic attack, light buttery notes, griotte, nice and smooth, belle symbiose. On tap at DDC, March 11, 2012.

JulienHuxley (5909) - Sherbrooke, Quebec, CANADA - MAR 18, 2012
On tap at DDC. A blend of a berliner weisse and a wheat beer aged in barrel with bretts for 3 years. Beautiful hazy orange pour with small head. Aroma leans more towards lactobacilius, it really smells like a plain fresh yoghurt. Some old wheat and red berries mostly raspeberries. The barrel is more apparent in the flavors providing a nice roundness to balance the overall dryness and wheat sour notes. Alcohol is somnewhat apparent for a lacto oriented wild ale and showcase candied fruits which adds a nice layer of complexity. I think this one is brilliantly executed and hope DDC will continue the Symbiose experience in the near futur.

Un verre à Montréal. Une bière qui présente une robe voilée et orangée. Une petite tête qui frétille. Un nez intriguant avec des cerises, des framboises et du fromage touché par les microbes. Une base maltée qui semble se dessiner autour d’un blé suret. Une présence de la barrique qui apporte des parfums boisés. Des traces de noix de coco. Des petits fruits surets qui gardent la pose. Une contenance des notes aigres appréciée par mes papilles. Une bouche qui présente un corps justement remué par les bulles. Une texture qui n’est jamais aqueuse. Une belle finale gorgée par les fruits et par la levure. Bien appréciable en ce début de printemps.

Quevillon (3165) - Boisbriand, Quebec, CANADA - MAR 9, 2012
Drank on tap at the Montreal brewpub on March 9, 2012. Pinkish orange hazy, thin head. Aroma of juicy cherries, hints of mineral. Slightly sour taste of cherries, hints of herbs and yeast, mineral aftertaste, very slightly bitter. A good sour beer, but without being a paint stripper!
