A hazed golden sour ale with a thin off white head. In aroma, a smooth sour ale with light ground cherries, light buttery notes, lactic acid, OK. In mouth, a nice smooth corky and slour ale with light Brett, light oily mouthfeel, a bit lighter than expected. On tap at Dieu du Ciel. Pours a lovely copper tinged orange with a very slight touch of haze under a medium sized white to beige head. Soft sour funk on the nose, a bit of sweet fruit. Medium bodied, soft sweetness and a nice bit of funk. The funk picks up a bit of a paper quality. Still a nice amount of fruitiness and a very light hint of acid into the finish. on tap at brewpub while waiting for my zwanze. hazy golden-pinkish with a decent off-white head, some retention and lacing. grape skin, wheat, floral fruitiness, red fruits, light acidity, hint of sweetness and other fruits, shy woodiness, spices and bretts. light but present leafy-herbal-citrusy hopping - relatively short finish along with light acidity. average carbonation, light body - oily. nice but somewhat linear. How: Tap at brewpub on the first week the beer was released.
The look: Cloudy amber body topped by a very small off-white head leaving very little lacings on the glass.
In long: Nose is very funky, woody and sour, some stinky feet. Taste has a nice toastiness (like fresh baguette crust), nice funk, wheat sensation, mild acidity, mild-medium sourness, dry herbs, dry grass, dusty oak, notes of tropical fruits, an overall freshness sensation that is hard to put into words other than saying it tasted fresh. Finish is rather dry with a refreshing tartness. Active carbonation. A refreshing beer that doesn’t overdo anything. The third entry in the Symbiose series, I’ve rated all three, I want to rate each new Symbiose that Dieu du Ciel put out but I’m not sure if I’ll do it because there are two type of people in this world: 1) Those who finish what they start,
On tap at DDC. Pour a beautiful pale orange with a very thick white head. Aroma is very wood, somewhat musty, maybe a little lactic. Interesting brett and tropical fruits mixture. You can also feel the barrel treatment in the taste. Moderate acidity from the bugs and barrel, but there is also sweetness from the alcohol and fruits. A nice full bodied high abv sour, but my least favourite of the three.

Une tulipe en attendant la Cantillon Zwanze 2012. Un liquide qui me semble orangé sur lequel flotte une belle petite mousse qui, à son départ, laisse un certain rideau blanc. Un nez boisé, de petites notes sucrées de coco et de fruits qui développent des parfums aigrelets et surets. Des saveurs plus ou moins intenses, disons aigrelettes, de petits fruits rouges, de citron, de blé et d’enfûtage. Une bouche de moyenne dimension avec un mouvement modéré des bulles et une texture qui me semble légèrement crémeuse. Bue en compagnie de Patrick en direct de la rue Laurier. Bière rougeâtre avec une mousse blanche. Le nez est de cerise, aigre et boisé. De drôles d’effluves de noix de coco apparaisse. Une fois dans la bouche le liquide se révèle léger, «flat». Elle manque de caractère. Il y a des cerises. La finale est aigre. On tap at Dieu du Ciel Montreal. Hazy amber body,moderate off-white head, a few stray streaks of lacing. Nose is full of a gentle sourness, sweaty funk, semi-sweet fruits: green apple, white pear, lemon acidity. Flavor carries on the nose with some minor blips as the profile doesn’t fully come together. Medium bodied, moderate acidity, smooth carbonation, nice sourness in the finish. Would love to try more offerings from the Symbiose series. 14 ounce sample on tap at the brewpub. The aroma has a ton of tart, green apple character, along with a good, funky Bretty nose. Quite fruity. Moderately hazy ruddy-amber colored body with a medium, creamy, firm off-white head present. Starts with some green-apple sourness. Becomes a little funky, but not too funky. Decent lacto and milk and cereal-like flavors in the middle. Finishes with a light berry sweetness. A nice, approachable sour, which isn’t over the top.
