Drank on tap (4 oz) at the Montreal brewpub on November 11, 2012. Honey golden little head. Sour sweet wheat aroma, hints of berries. Taste not too sour, fruity notes of wheat, a little sweet, not that bitter. Its good, but the Brett makes it less sour!

In short: A refreshing tart funky amber ale. Very good.
How: Tap at brewpub on the first week the beer was released.
The look: Cloudy amber body topped by a very small off-white head leaving very little lacings on the glass.
In long: Nose is very funky, woody and sour, some stinky feet. Taste has a nice toastiness (like fresh baguette crust), nice funk, wheat sensation, mild acidity, mild-medium sourness, dry herbs, dry grass, dusty oak, notes of tropical fruits, an overall freshness sensation that is hard to put into words other than saying it tasted fresh. Finish is rather dry with a refreshing tartness. Active carbonation. A refreshing beer that doesnt overdo anything. The third entry in the Symbiose series, Ive rated all three, I want to rate each new Symbiose that Dieu du Ciel put out but Im not sure if Ill do it because there are two type of people in this world: 1) Those who finish what they start,

A hazed golden sour ale with a thin off white head. In aroma, a smooth sour ale with light ground cherries, light buttery notes, lactic acid, OK. In mouth, a nice smooth corky and slour ale with light Brett, light oily mouthfeel, a bit lighter than expected. On tap at brewpub,Nov. 23 2012.

Vieillie 2 ans en ft de chne. Dguste en ft sur place Montral. De couleur dore fonce et claire. Nez de levures fruites (cerises sres, notes de pommes vertes et dagrumes) et sauvages, de crales sres, moyennement bois (ft de chne) et lger de miel. Moyennement ronde en bouche avec un ptillement bas-moyen et une texture aux petites notes huileuses. Got de levures sauvages fruites (cerises sres, notes de citron, traces de pommes vertes) lgrement sres et accompagn dun lger got bois (ft de chne) lors de lentre en bouche auquel se rajoute un got de crales moyennement sres avec des notes de miel et des traces de sucre blanc puis en finale lon retrouve des traces de bois humide et dherbes mouilles. Post-got moyen-long, compos dun got bois doux, de crales lgrement sres aux notes asschantes et de levures fruites (mot de cerises, pelures de pommes). (28 novembre 2012)

Bue en compagnie de Patrick en direct de la rue Laurier. Bire rougetre avec une mousse blanche. Le nez est de cerise, aigre et bois. De drles deffluves de noix de coco apparaisse. Une fois dans la bouche le liquide se rvle lger, flat. Elle manque de caractre. Il y a des cerises. La finale est aigre. Une dception aprs la succulente symbiose 1. 5+/10

on tap at brewpub while waiting for my zwanze. hazy golden-pinkish with a decent off-white head, some retention and lacing. grape skin, wheat, floral fruitiness, red fruits, light acidity, hint of sweetness and other fruits, shy woodiness, spices and bretts. light but present leafy-herbal-citrusy hopping - relatively short finish along with light acidity. average carbonation, light body - oily. nice but somewhat linear.

On tap at Dieu du Ciel Montreal. Hazy amber body,moderate off-white head, a few stray streaks of lacing. Nose is full of a gentle sourness, sweaty funk, semi-sweet fruits: green apple, white pear, lemon acidity. Flavor carries on the nose with some minor blips as the profile doesnt fully come together. Medium bodied, moderate acidity, smooth carbonation, nice sourness in the finish. Would love to try more offerings from the Symbiose series.

On tap at DDC. Pours dark golden with amber reflects. Aroma is sweet, fruits. Taste is of very slitgh sourness, sligth acidity, some fruits, sweetness. Palate:ligth-medium body. Overall: Good. A bit weird.

Une tulipe en attendant la Cantillon Zwanze 2012. Un liquide qui me semble orang sur lequel flotte une belle petite mousse qui, son dpart, laisse un certain rideau blanc. Un nez bois, de petites notes sucres de coco et de fruits qui dveloppent des parfums aigrelets et surets. Des saveurs plus ou moins intenses, disons aigrelettes, de petits fruits rouges, de citron, de bl et denftage. Une bouche de moyenne dimension avec un mouvement modr des bulles et une texture qui me semble lgrement crmeuse. Une finale dans le domaine de la gentillesse avec de petites notes citronnes.

Impressive on tap!!! Pours a bright golden yellow with a thin white head. The nose is sweet and fruity with a tartness and sour aroma. Wheat and a straw or hay malt. Definitely funky and bretty with a gorgeous aroma! The sourness is rather reserved in that taste opting for more of a great tartness and complex sour flavour than actual sourness or lingering acetic notes. Awesome bretty and funked up malts with hay and floral fruit notes. Just an awesome brew!

On tap at DDC. Pours a reddish amber with a thick foamy head; quickly recedes to a thin ring around the glass. Aroma is musty and vinous, conjures up a basement type funk aspect. Sharp tartness and acidity up front in the flavor, gradually opens up to notes of corn, straw and wood. Finishes dry with a lingering tannin character. Medium body, low carbonation doesnt occlude the flavor profile. This is an adventurous brew, though it seems to grow on you and become fairly drinkable after a few sips.
