Mariage entre la Solstice d’Été aux framboises et la Dernière Volonté Brettanomyces, cette bière de couleur corail au nez frais offre des notes de fruit confiturés, balancées par l’acidité provenant de la Solstice d’Été et le boisé du fût de chêne.

Coral coloured beer with a fresh aroma whose jammy flavours are well balanced by the acidity of the Solstice d’Été and the woodiness of the oak barrel.

355ml bottle @ Alex's. Pours a cloudy dirty copper peach colour with a small off-white head. Nose is apricot jam, oakey notes. Flavour is wild yeast, apricots, with a nice oak character, with an overall dry character. This is very tasty.

Hazy golden color. Nice aroma, sour, with raspberry jam. It has some moderate sweetness, moderate acidity, strong flavor of raspberry jam, a bit tannic in the final.

Flavour is very dry and wild yeast-dominated upfront, with lots of jammy apricots, wood, oak, and wild yeast. Woody, jammy and bretty on the finish. Complex and wonderfully crafted. Excellent.

(Une bouteille provenant de la source): Au nez la tomate, l'oxydation et l'autolyse me saute au visage mais c'était une question de temps avant que l'amalgame se place. La Solstice prend bien sa place avec un bouquet herbacé qui se fait secouer par les fines bulles. Les Brett se fusionnent aux framboises magnifiquement et l'ensemble prend de la confiance. Sec, minéral et boisé sans exagérer.
