Mariage entre la Solstice d’Été aux framboises et la Dernière Volonté Brettanomyces, cette bière de couleur corail au nez frais offre des notes de fruit confiturés, balancées par l’acidité provenant de la Solstice d’Été et le boisé du fût de chêne.

Coral coloured beer with a fresh aroma whose jammy flavours are well balanced by the acidity of the Solstice d’Été and the woodiness of the oak barrel.

341 ml bottle purchase at Les Marchands de Bières in Sainte-Thérèse (Québec) on June 27, 2017. Pinkish orange hue, small head. Brett infused raspberry aroma, quite sour. Dry raspberry taste, quite fruity but the soureness is a bit tone down, light finish. It’s nice, but my expectation was much higher than that for a 5$ beer, this is a lighter version in taste of the raspberry Solstice d’Été and the Brett Dernière Volonté was almost a non factor!

Cloudy pinkish red. Mellower than expected with a soft raspberry sour nose and flavor. A little sweet. Easy drinking sour. Good, but not quite as expected.

Bottle, sent to me by SlovakSniper (thanks Pat!), and shared at game night. The label describes the colour perfectly-- it is indeed coral, very hazy, with a scant white head. Aroma is seedy raspberry and funk, medicinal undertones. Flavours of unripened berries and woody funk, undertones of grappa and leather. Finish is bone dry. Good beer.

Bouteille 2016-11-23. Une belle robe rose avec une mousse blanche. Un nez de yougourt, fruits, bois le tout est harmoniuex. Une bouche légèrement aigre avec des saveurs fruitées, acide sur une finale de bois. Agréable et facile.

341ml bottle. Slightly hazy pinkish orange with a foamy off-white head. Flavors are raspberry jam, oak and light funk with floral, vinous, medicinal and spicy notes. Light to medium body, good carbonation, smooth texture.

341ml bottle (thx, Hugo V.!). Pours an opaque pale raspberry color with a rose-ish head. Aroma is raspberries, barrel notes. Same taste with some hoppy bitterness. Excellent stuff. Bravo, DDC!

bottle thanks to tom10101! pours hazy bright red with a small pink cap offering some retention and lacing. bright vinous merlot grapes, vibrant fruity raspberries, red and purple matter, smooth spicy oak, bitter medicinal herbs, some citrus oils, light acidity from both wild flora and fruits - complex acid profile; pepper. moderate carbonation, light body, drying and softly tart fruity-herbal finish. on the american side of things but oh-so-never overdone. a fine tuned if not exceptional blend/craft.

Pours a pretty clear red with a lot of unsightly floaters and a small pinkish rim that leaves somewhat good lacing. Nose is of cherries, oak and trace vinegar. Taste is not too sweet and even feels dry to some extent, mostly because of the wood tannins I would say. More cherries, light cereals and oak. Body is medium, carbonation moderate. Tannic/vinous mouthfeel. Overall a really nice barrel aged beer, why can’t they do one all the time now?
