Mondial de la bière 2012 - Bière presque opaque, couleur de mélasse et coiffée d’un fin col chamois s’étirant doucement au verre. Des arômes intenses de pain grillé, de moka et de terreau humide. Peu amère, assez minérale et, effectivement, un profil umami assez présent. De corps solide, elle est veloutée et délicatement effervescente. On tap. Dark pour, with thin off white head. Aroma of burnt grain, something meaty in the aroma, lots of tea-like aromas that I can’t all make out, soft but complex aroma. Taste is mainly of roasted grain, somewhere akin a porter, with a dry tea like finishing flavor. Palate is mellow and creamy with soft carbonation but so much fun to drink. I don’t know how mushrooms can contribute to beer much, or if it can have more effect on the palate than in the taste, but this was one of the most palatable beers I’ve had in a long time. Delicious. A clear brown ale with a thin moka head. A nutty malt aroma, caramel.In mouth, a nice nutty brown ale with caramel and light hops. Clear copper poor with a beige head. Aromas of oak, sauted mushrooms and pepper. Good balance, nicely effervescent with a dry finish. Flavors of cranberries, morel mushrooms and hints of caramel.

Sampled draught at the Mondial, Montreal (May 2007). Clear amber-copper with a lasting smidgeon of head and faint fine lacing....sauteed fresh wild mushrooms and earthy malts, light chalky and salty notes in the wholly original, fascinating aroma.....body is dry, fungal-earthy, lightly tart, lightly yeasty-cobwebby, growing just a bit sweeter with warmth....some fairly hard mineralic/metalic notes at the finish detract a bit, but this fascinating experiment is another success in DDC’s longstanding boundary-pushing approach to the fine art of brewing, and I’m actually disappointed that I never went back for a second glass. mds (2250) - Toronto, Ontario, CANADA - JUN 30, 2007
Auburn-copper coloured body with a creamy white head. Candyish nutty aroma, ginger, and sugars. I didn’t really get any mushroom flavour out of this - mostly doughy malts and generic spices which were difficult to split up. Interesting, to say the least.

Verre de dégustation, provenant d’un fût, dégusté au Mondial de la Bière 2007 (Montréal, QC). Arôme: Odeur de champignon et d’épices. Apparence: La couleur est ambrée. Présence d’un moeyn col mousseux et d’une large dentelle sur le verre. Saveur: Goût de champignons et de noix. Palette: Le corps et la texture sont mince. Faible effervescence en bouche. UPDATED: DEC 29, 2009 Clear mahogany body with a small beige head. Well malted beer with a Brown Ale kind of earthy and nutty taste with a nice little touch of smoke. The mushrooms are there but remain discreet camouflaged in the aforementioned flavours. In fact I’m not sure I would have named mushroom as a flavour have I not known it was brewed with it. Once you know it you can taste the mushrooms it but it is so unusual in a beer that I would have not guessed it. Creamy yet silky body. Not something I’d have everyday but it was definitively enjoyable. Certainly the most enjoyable experience I’ve had with legal mushrooms.
