English:: "Hjul & Stejle" is an old execution method called "The Wheel" in English which was often used for blasphemers and the like. Christmas is a time ripe with beliefs and myths - yet belief in Jesus, Santa Claus and angels ought to be a thing of the past. We symbolically execute Santa Claus and the like and propose a toast in Hjul & Stejle: A beer where the clean hop bitternes and distinctive flavour of rye malt is balanced by the dry, spicy contribution from Brettanomyces at work. Hjul & Stejle is a good match for any Christmas lunch - whether you believe or not! Launched november 2009.

Bottle (Ipswich contract-brewed version). Head is initially average sized, frothy, off-white, mostly diminishing. Body is hazy light amber. Aroma is moderately malty (toasted grain, sourdough bread), lightly hoppy (herbs), lightly to moderately yeasty (cobwebs, mold), with notes of apple skin, autumn leaves, soured fruit (kumquat, melon rind), light note of celery. Flavor is moderately sweet, lightly to moderately acidic, lightly bitter. Finish is lightly sweet, lightly to moderately acidic, moderately bitter. Medium body, watery texture, lively carbonation. Seems to have some potential, but it’s fairly vegetal and off-sour. Hard to know if this is Ipswich’s fault (probably, based on other beers I’ve had from them, all poor) or Djaevlebryg’s (only have had one other beer from them, Gudelos, and it’s truly excellent). Why this brewery is using Ipswich is what I want to know...if you’re a classy, talented brewer (again, judging only from Gudelos), why would you pick a junk brewery like Ipswich??? This is just as perplexing as brewers choosing to use De Proef, but I guess the answer is money. Ipswich and De Proef are probably cheap. Sigh.

Clearing some of my old bottle shelves. Poured a golden color with a larger sized head. Spices, some citrus, and yeast.

den er godt krydret, men mangler noget humle i at være en god juleøl........

Clear deep golden with a fluffy white head. Lovely fruity and farm-y Bretty nose, slight tropical and earthy Belgian tree fruity notes with a bit of spicy rye. Smooth and complexly flavored brew with rye and toast and Belgian blonde malts, brett funk throughout, gentle tree fruity tones, earthy semi dry finish.

Cerveza de centeno. Realmente rara.

Sample at SBWF 2014. Fruity smell with a light spicy aroma. Similar taste. Light but easy to drink.

(Bottle). Aroma and taste of sour yeast, caramel, lemon and spices. I find the beer unbalanced and too acidic.
