COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Aged ipa. Not much nose. Nice dogfish head malt and hop flavors. Maple syrup just a hint....

Pours a cloudy golden yellow with big fluffy head. Aromas of tropical fruits, grass, and some yeast. Flavors are all tropical, grassy, yeasty, with some lingering funk.

Nice looking beer. Deep, golden color with huge white head. Aroma of tropical fruits , malt and hint of maple syrup. Bitterness and malty sweetness are intertwined. Hops dominate in finish . Medium body , rather low carbonation. Great IPA.

Pours slight hazy copper orange with a large white head that slowly fades to a thick frothy cap and has excellent retention. AROMA: crisp malt, coriander, pineapple, pine resin, herbal hops, herbs, slight earthy funk, peppercorn, maple, woody, citrus, caramel, hay, roasty, phenols and spices. TASTE: crisp malt, coriander, pineapple, pine resin, hop spice, herbs, slight earthy funk, peppercorn, maple, woody, citrus, caramel, hay, roasty, phenols and spices. AFTER TASTE: maple,, malt, peppercorn, hop spice, herbs, citrus and spices with an oily spiced malty finish.

Cask - Nice rich head. Only a mild bitterness from mixing the beers. Certainly has more sweetness then the 60 minute and more bitterness then the 90 minute. Has a creamy taste to it. I know there is maple syrup in her but it is only a hint, helps add to the overall sweet flavor of the beer.

Bottled 10/07/15 (so about 90 days out). Pours pale golden, white head. Aroma is classic DFH IPA, orange tangerine sweetness, lemon, definitely some sweet notes, maybe the maple syrup comes through a bit. Flavor is orange, lemon, nice citrus, and maybe some syrupy sweetness, but I feel like it’s more just imperial IPA sugar sweetness, rather than just maple syrup, but as it warms, the syrup comes through more. I’m a fan, though. It’s not overly bitter, but the citrus does shine through. Nice mouthfeel as well, kinda creamy. DFH does IPAs well. Not as good as 90 min, but still great.

I like 60 minute and I like 90 minute and it turns out I like this one too! Very fresh tasting. No maple syrup really, but it has an interesting yeasty taste. Idk I like it a lot....
