Johnny Cask has entered the building! Weve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wont be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Pours light orange with a super thick off-white head. Aroma is clean "sweet-smelling" mild pine. The malts rule in this beer. Taste is mellow peppery malts with a hoppy pine sneaking around in the background. The malts are verging on a chocolate flavor, but not quite. That sweet pine makes its presence known in the finish. Awesome, awesome, awesome!

Poured from bottle into glass a amber color with big head. Aroma has malts up front with citrus and pine following. Taste of maple and citrus on the finish. Good Beer.

It pours a beautiful light golden orange leaving the same color body with some nice haziness added. A one inch white foamy head appears inside the nonic pint glass. The smell has the maple syrup up front, but not overbearing, because I can still smell the hops, some light grapefruit and some light malts. The taste is sweet with the maple syrup up front but not overbearing still combined nicely with the hops, grapefruit and malts. The palate is between light and medium, no problem finishing off the bomber that was sitting on my buddys store shelf since August. Overall, this is an excellent American IPA that is borderline English because its so sweet. Next time, I want this with pancakes and sausage at breakfast.

Cloudy orange with a pale head. Aroma is pineapple, citrus. Medium bodied, hoppy on the palate. Taste is grapefruit, pineapple, papaya. Not as good as the 90 minute.

Loads of honey, caramel, and toffee in this...not what you want in an IPA. Mild citrus, evergreen, grapefruit pith and orange peel. Medium mouthfeel. Meh.

Really nice but honestly was expecting more hop punch from this. The honey and malt come through quite strong with the piney hops taking a back seat.

Very clean bitterness, long finish. Bottle pours a little hazy due to yeast sediment. Easy to drink. Palate is smooth. WIsh it was more complex. Overall good.

Bomber to glass shaker. Pours a clear yellow with a thick white head that doesnt dissipate. Light hop flavors, and medium dense mouthfeel. I was expecting something heavier. If this make sense, it seems to me to be lighter than that 60min. I cant really taste any maple syrup as advertised. For the rarity, this gets a strong "meh"

Bottle from Khourys; clear amber pour, frothy white head, malt and honey aroma, as with the 60/90 great balance of malt and hop, citrus hop bite biscuity malt, heavy carbonation. Excellent IPA.
