Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Great citrusy, hoppy aroma. Flavor is citrus hops at first, with balanced malt profile and finishes with a great caramel and maple flavor. Not overly sweet but the maple flavor is very nice as a finale. ---Rated via Beer Buddy for iPhone

Pours a brilliant gold with a thick, creamy head that fades quickly but stays rimming the glass the entirety of the drink. Strong, bursting hops scent with an interesting mix of maple syrup and tropical fruits, maybe a trace of a thin caramel aroma as well. Body is very full with a subtle hint of maple that is sweet but not overpowering. I’ll definitely be picking this one up again.

Pours a clear orange with a medium sized off-white head. Aroma of floral hops, caramel malt, and slight alcohol. Flavor of caramel malt, some maple, citrus and floral hops. Pretty good.

I really the Dogfishes. The 75 was one I had tasted and it did not disappoint. This fits in nicely between the 60 and 90. ---Rated via Beer Buddy for iPhone

(bottle) My offering for the 25th anniversary dinner. A good all-around IPA but seem to fall a bit short of the hype.

Pours a hazy golden colour with a creamy white head. Aroma smells a little of apricots and peaches with some slight floral notes and a little maple syrup. Taste is mildly sweet throughout with a nice bitterness that is not too strong. Medium body, smooth on the palate, and livelier carbonation. Overall a good IPA.

Light gold color with a massive head even after a gentle pour and globs of lacing. Smells of caramel and citrus. Great flavors and balance with a slight sweetness. Creamy, smooth, and highly carbonated allowing a pleasant mouthfeel. Great IPA that is easy to drink and highly recommended!
