COMMERCIAL DESCRIPTION
Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

Bottle into tulip. Pours a slightly cloudy golden orange color with a very foamy head that lingers a long time. Great aroma of citrus, pine, barrel notes, vanilla, toast, maple, and grass. Taste is rich in flavor. Hops hit immediately along with toasted malt. Barrel notes, vanilla, pine in the middle. Finish is long, mostly toasted malt, grass, hints of maple and spiciness. Medium body, a bit foamy in the mouthfeel, and that’s about the only knock on this. Really great IPA. Better than 60, 90 and 120 minute. Try this if you can.

Pours crystal clear pale gold with a huge with foamy head. Smells lemon and hops. Tastes like a like IPA. Nice and smooth.

Poured from a pint bottle. Pours with a nice, thick layer of head. Very hoppy aroma. The perfect amount of hop taste that signifies an IPA with a nice bitterness. The complexity of the maple syrup comes alive in the aftertaste. A very solid IPA. ---Rated via Beer Buddy for iPhone

2012 bottling with the Groucho Marx glasses and nose on Johnny - pours clearish with some haz, golden orange, with huge, magnificent, with white fluffy head, terrific retention and awesome lacing. Big bitter nose of orange, biting hops, nugs, darker piny resin, sweet malts, and touch of lemon pepper at the backbone. Evergreen. Taste is awesome as well. Nice mix of oily hops with zestier bittering hops at the finish. Oranges, citrus, floral and touch of vanilla at the finish. Medium palate, nice middle ground between the two brethren DFH. This is just right. Perhaps the best IPA. If only they made it right, year round, and in 4 or 6 packs. Killer.

Hazy, light, orangish brown. Aromas of grapefruit, lightly bruleed sugar, a slight toastiness and candied citrus. Flavors of candied citrus, bitter grapefruit and classic Dogfish bruleed sugar notes linger on the finish. Not as rich, full bodied and malty as the 90 minute.. Though a good balance of malt richness and bitter citrus hoppiness. Nice weight in mouth and fine carbonation. --- tasted while on a long journey to understand the world around me...

pours golden with a thick, lasting white head and foamy lacing. aroma is hoppy with notes of lemon, yeast, and coriander. taste is rich with maple, lemon, pine and wood. sticky mouthfeel, full bodied. rather acidic. finish is sticky and bittersweet.

Pours cloudy golden orange with pillowy white head. A dry hop presence on the nose- very earthy. A very balanced palate with dry earth flavors and a touch of citrus. Nice palate, rich and not over bittered.

UPDATED: NOV 15, 2012 This beer is what I had hoped it would be; sessionable with more of a hop profile than 60 minute but not as sweet as 90 minute. The pour is a dark gold color with a huge fluffy off-white head. Citrus hops with grapefruit and lemongrass flavors, some herbal undertones, and a touch of pine toward the back end. I would have never had known maple was in this if I didn’t read the description and I’m still skeptical. At no time did I pick up that. Maybe it’s a shade too light/thin in the body but nothing to worry about. Crisp bitterness and refreshing, with some nice flavors makes this one a keeper. This is a pretty solid IPA and I’m generally not a big fan of Dogfish Head.

Bomber---->snifter. Pours a dark straw witha huge fluffy white head and crazy lacing. Aroma is floral and sweet citrus. Taste is same as smell with a little sweet malt thrown in at the end. Palate is pretty smooth with good carbonation. Not sire why I was expecting more, but this one is just average.

Bottle. Pours a deep, thick cheddar orange with a huge flippin’ white head. Nose is grapefruit, orange peel, pine, rose, and new carpet. Flavor is garpefruit pulp, orange juice, rose, and light biscuit. Decent mouthfeel. There’s maple syrup in this??? Where?
