Johnny Cask has entered the building! Weve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours wont be ready until late March.

Only the ratings for bottles and single-cask pours of this should be rated. The 50/50 blends of 60 and 90 where they come from different taps are not rateable, and do not belong here.

bottle shared with mathieuc, tom10101 minderbinder and others. thanks david! hazy light yellow orange, nice off-white had, good retention/lacing. earthy, spicy malts - nicely toasted, some leafiness and sweetness. average carbonation, short to medium long grassy, medium body - oily. nice but freshness is missing or hops have faded significantly.

Bottle. Pours golden with medium creamy white head. Interesting lacing. Aroma is of soap, malt, citrus, caramel. Taste is of malt, citrus, caramel. Palate: medium body. Overall: Good beer, but weird soap in aroma.

Bottle (750 ml). Shared by David M., thanks! Unclear yellow/orange with a small white head. Aroma of malt/caramel with citrus and resinous hops. Taste is sweet and malty (caramel) with a smooth hoppy finish. I didnt smell or taste the maple syrup. Good well balanced IPA but a little too malty for my taste (maybe because the bottle was old?).

Dogfish Head sure knows how to brew with special ingredients (until they have the occasionnal failure but they usually make up for it). This one was really malty/sweet but with a lot of hops to counteract. Nice! I couldnt really taste the maple syrup but I believe this is a hard taste to put in a finished product as it will most likely just ferment out and lose its aromatics.

Pours a strinkingly clear amber with an aggressive, pillowy head that is slow to dissipate. (poured into a tulip). Mellow, orangehop aroma. Something sweet smelling. Nice, smooth taste.Hop character melds with a sweetness that makes this pretty delish. A little nutty. Darker finish that other IPAs. Residual sweetness. Very good. Not a beer to chug but one to savor.

Bottle from Burger Bar at Mandalay Bay. Clear orange-amber color with a really large whitish head. Aroma of citrus and maple syrup. Balance weighted toward the bitter side, but the syrup adds a little sweetness that comes through nicely. Fizzy and dry on the palate; medium bodied. I actually prefer either the 90 or the 60, though the 60 not by much.

Aroma of sweet fruit, bananas and minty pine. Looks like a tripel in the glass. Light amber in color, nice fizzy head. Very clean prototypical IPA flavor, sweet malt, pine and mint. Slightly astringent on the tongue. Overall, tasty and nice to have sampled it.

750ml bottle, I was really looking forward to trying this one. It wasnt at all what I was expecting. I was actually expecting a very hoppy beer (between the 60 and 90 minutute ipa), but this had a different flavor to it. It had a slight hoppy aroma and flavor, but because of the maple syrup, it gave it a different taste. Overall, excellent brew, well balanced,

Bottle from Vegas. Pours hazy orange with sediment, two fingers head. Smell is light citrus, soft. Taste is smooth, sweet, citrus hoppy. Very good ipa.

Tasted on 8/20/12 from a capped 750mL bottle purchased at Sun Devil. Pours clear, deep orange with a massive, fluffy off-white head that slowly recedes to thick and rocky lace, leaving sticky residue along the inside of the glass. The nose is full of lemon and orange peel citrus hops, with some caramel malt, and the maple aroma coming through nicely. The flavor is lightly floral, tons of citrus, hops, with plenty of caramel malt and some maple syrup backing everything up. The body is quite full with average, smooth up front and stinging on the back, carbonation, and a long citrus hops finish.
